Ingredients:

For the Cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1 cup milk

For the Mint Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)
  • Fresh mint leaves for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and peppermint extract.
  4. Gradually add the dry ingredient mixture to the butter-sugar mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
  5. Divide the cake batter evenly between the prepared cake pans. Smooth the tops with a spatula to ensure even baking.
  6. Bake for approximately 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  7. While the cakes cool, prepare the mint frosting. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, milk, peppermint extract, and a few drops of green food coloring (if desired). Beat on medium-high speed until the frosting is light and fluffy.
  8. Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous layer of mint frosting on top. Carefully place the second cake layer on top and frost the entire cake, including the sides.
  9. For an extra touch of elegance, garnish the cake with fresh mint leaves.
