Fruit scones are a delightful twist on the classic plain scones, adding a burst of natural sweetness and vibrant colors to the traditional tea time treat. These scones are studded with juicy dried fruits like raisins, currants, or cranberries, making them a perfect accompaniment to your morning or afternoon tea. Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 2/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 cup dried fruits (raisins, currants, cranberries, or a mix)
  • Optional: Additional milk for brushing the scones

Instructions:

  1. Preheat and Prepare:
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Mix the Dry Ingredients:
    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  3. Cut in the Butter:
    Add the cold butter cubes to the dry ingredients. Using a pastry cutter or your fingertips, cut or rub the butter into the flour mixture until it resembles coarse crumbs.
  4. Add the Fruits:
    Add the dried fruits of your choice to the flour mixture. Mix them in gently, ensuring they are evenly distributed throughout the dough.
  5. Add the Wet Ingredients:
    Pour in the whole milk and vanilla extract. Stir the mixture with a fork until it starts to come together. Do not overmix; the dough should be slightly crumbly.
  6. Shape and Cut the Scones:
    Transfer the dough onto a lightly floured surface. Gently knead it a few times until it forms a cohesive ball. Flatten the dough into a 1-inch thick round disc. Using a round biscuit cutter or the rim of a glass, cut out scones from the dough and place them on the prepared baking sheet. Gather the remaining dough scraps, reshape, and continue cutting until all the dough is used.
  7. Brush with Milk (Optional):
    For a golden and slightly shiny appearance, brush the tops of the scones with a little milk.
  8. Bake the Scones:
    Place the baking sheet with the scones in the preheated oven and bake for approximately 12-15 minutes, or until the scones are lightly golden brown on top.
  9. Cool and Serve:
    Remove the scones from the oven and let them cool on a wire rack for a few minutes. Serve the fruit scones warm or at room temperature. Enjoy them on their own or with a dollop of clotted cream and a spoonful of your favorite fruit jam.
