Purchasing fresh pork is crucial not only for the taste and quality of your meals but also for health reasons. In South Africa, where the selection of pork products is vast and varied, knowing how to spot the freshest cuts is essential. Here are eight tips to help you ensure the pork you buy is fresh.

1. Check the Colour

Fresh pork should have a pinkish-red colour. If the meat is pale or has a greyish tint, it might not be fresh. Bright red meat indicates that it has been exposed to oxygen for a shorter period, which is a good sign of freshness.

2. Inspect the Fat

The fat on fresh pork should be white and firm, not yellow or sticky. Yellowing fat can indicate that the meat has been stored for too long or at improper temperatures.

3. Smell the Meat

Fresh pork should have a mild, almost sweet smell. Any sour or ammonia-like odours are clear indicators that the pork is past its prime. Trust your nose; if it doesn’t smell right, it probably isn’t.

4. Feel the Texture

Touch the meat if possible. Fresh pork should be firm and slightly moist. If the meat feels slimy or sticky, it’s a sign that it’s beginning to spoil. Always wash your hands thoroughly after handling raw meat.

5. Check for Packaging Integrity

Ensure the packaging is intact with no tears or leaks. Damaged packaging can expose the meat to harmful bacteria, affecting its freshness and safety.

6. Look at the Expiry Date

While this may seem obvious, always check the expiry date on the packaging. Even if the meat looks and smells fine, it’s not worth the risk if it’s past the date indicated.

7. Consider the Source

Purchasing pork from reputable butchers or stores known for their quality and freshness is wise. Often, these places have a faster turnover, ensuring their products are fresher.

8. Observe the Juices

If the pork is packaged, look at the juices in the tray. They should be clear or slightly pink. A large amount of juice, especially if it’s cloudy or dark, can indicate that the meat has been sitting for a while.

By following these tips, you can significantly increase your chances of bringing home fresh, high-quality pork for your meals. Remember, when in doubt, it’s better to err on the side of caution and choose a different cut or even a different store. Your health and the enjoyment of your meals depend on the freshness of the ingredients you use.
