A good marinade can completely change the character of the finished dish, whether you prefer smoky, spicy, creamy or fresh flavours. Yoghurt provides a rich base that helps tenderise the chicken, while ingredients such as lemon juice, garlic, ginger and spices build layers of flavour. Ingredients

  • 1 kg boneless chicken thighs or chicken breasts
  • 1 cup plain full-fat yoghurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, finely grated
  • 2 tablespoons fresh ginger, finely grated
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • ½ teaspoon chilli powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method

Cut the chicken into evenly sized pieces of approximately 4 to 5 cm. Place the chicken in a large bowl and set aside.

In another bowl, combine the yoghurt, lemon juice, oil, garlic, ginger, garam masala, cumin, coriander, paprika, turmeric, chilli powder, salt and black pepper. Mix thoroughly until the spices are evenly distributed.

Pour the marinade over the chicken and toss until every piece is well coated. Cover the bowl and refrigerate for at least two hours, although overnight marinating will give the chicken even more flavour.

Thread the chicken onto soaked wooden skewers if desired. Grill under a hot grill, cook on a braai or roast in an oven preheated to 220°C. Turn the chicken occasionally and cook until browned, slightly charred around the edges and completely cooked through.

  • 1 kg boneless chicken thighs
  • 1 cup plain yoghurt
  • 2 tablespoons lemon juice

  • 2 teaspoons smoked paprika

Method

Combine all the ingredients except the chicken in a large bowl. Stir until the yoghurt is smooth and the spices are evenly mixed.

Add the chicken and massage the marinade into the meat. Cover and refrigerate for at least four hours. Overnight is even better if you have time.

Remove the chicken from the refrigerator approximately 20 minutes before cooking. Thread onto skewers or place directly onto a lightly oiled baking tray.

Cook over medium-hot coals, turning regularly to prevent the yoghurt marinade from burning. Alternatively, roast at 220°C for approximately 25 to 30 minutes, turning halfway through cooking.

The chicken should have browned edges and be completely cooked through. Serve with lemon wedges, fresh coriander and a cooling yoghurt sauce.

3. Spicy Chilli and Garlic Tikka Marinade

For anyone who enjoys a hotter dinner, this chilli and garlic marinade brings serious flavour to chicken tikka. Fresh chillies provide a sharper heat while chilli powder allows you to control the overall intensity. The yoghurt helps balance the spice and keeps the chicken tender.

  • 1 kg chicken thighs, cut into large pieces
  • 1 cup plain yoghurt
  • 2 tablespoons lemon juice
  • 2 tablespoons oil
  • 5 cloves garlic, crushed
  • 1 tablespoon fresh ginger, grated
  • 2 fresh red chillies, finely chopped
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chilli powder
  • ½ teaspoon turmeric
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method

Add the yoghurt, lemon juice, oil, garlic, ginger and fresh chillies to a bowl. Stir in the garam masala, cumin, paprika, chilli powder, turmeric, salt and pepper.

Add the chicken and mix thoroughly. Cover and refrigerate for at least two hours.

Place the chicken on skewers or a lined baking tray. Cook over a hot braai, under a grill or in an oven at 220°C until the outside is nicely browned and the chicken is cooked through.

Turn the chicken regularly during cooking so that the pieces brown evenly. Serve with cooling cucumber yoghurt, fresh coriander and warm naan or rice.

For a milder version, remove the seeds from the fresh chillies and reduce the chilli powder.

4. Lemon and Herb Chicken Tikka Marinade

This lighter marinade offers a fresh alternative to heavily spiced tikka. Lemon, coriander and mint give the chicken a bright flavour while cumin and garlic provide enough warmth to keep the dish interesting. It is particularly good for summer dinners served with a crisp salad.

  • 1 kg chicken breast or thighs
  • ¾ cup plain yoghurt
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, crushed
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon paprika
  • ¼ teaspoon turmeric
  • 2 tablespoons chopped fresh coriander
  • 2 tablespoons chopped fresh mint
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method

Place the yoghurt, lemon juice, olive oil, garlic and ginger in a large bowl. Add the cumin, coriander, paprika, turmeric, fresh herbs, salt and pepper.

Stir thoroughly before adding the chicken. Toss the chicken through the marinade until completely coated.

Cover and refrigerate for two to four hours. Avoid leaving the chicken in this highly acidic marinade for excessively long periods because the texture can become unpleasantly soft.

Cook the chicken on a hot grill, braai or in an oven preheated to 220°C. Turn the pieces regularly and cook until lightly charred and completely cooked through.

Serve with a fresh green salad, cucumber, rice or flatbreads. Finish with extra chopped herbs and a squeeze of fresh lemon juice.

5. Creamy Coconut Chicken Tikka Marinade

  • 1 cup full-fat coconut milk
  • 2 tablespoons lemon juice

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

Method

Whisk the coconut milk, lemon juice and oil together in a large bowl. Add the garlic, ginger, garam masala, cumin, coriander, paprika, turmeric, chilli powder, salt and pepper.

Add the chicken pieces and stir until thoroughly coated. Cover and refrigerate for at least two hours.

Remove the chicken from the marinade and allow excess marinade to drip off before cooking. This helps the chicken develop better colour rather than steaming in excess liquid.

Cook the chicken on a braai, grill or in an oven at 220°C. Turn regularly until the pieces are browned and completely cooked.

Mix thoroughly until you have a smooth, richly coloured marinade. Add the chicken and coat each piece evenly.

Cover and refrigerate for two to eight hours. Remove the chicken from the refrigerator about 20 minutes before cooking.

  • ½ teaspoon mild chilli powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method

Mix the yoghurt, honey, lemon juice and oil in a large bowl. Add the garlic, ginger, garam masala, paprika, cumin, turmeric, chilli powder, salt and pepper.

Stir until smooth, then add the chicken. Coat every piece thoroughly and cover the bowl.

Refrigerate for two to six hours. Remove the chicken from the refrigerator before cooking so it is not ice cold when it goes onto the grill.

Cook over medium-high heat, turning frequently because the honey can cause the exterior to brown quickly. Make sure the thickest pieces are completely cooked before removing them from the heat.

Rest the chicken for five minutes before serving. Pair it with a simple cucumber salad, rice or roasted potatoes.

How Long Should You Marinate Chicken Tikka

The ideal marinating time depends on the ingredients in the marinade and the size of the chicken pieces. Most yoghurt-based chicken tikka marinades work well after two to four hours, while an overnight marinade can provide even deeper flavour. If your marinade contains a significant amount of lemon juice or another acidic ingredient, avoid leaving the chicken for an excessively long period because the texture can become too soft.

Chicken should always be marinated in the refrigerator rather than left at room temperature. Keep raw chicken separate from ready-to-eat ingredients and never reuse marinade that has been in contact with raw chicken unless it is thoroughly cooked first. If you want extra sauce for serving, prepare a fresh batch rather than using the leftover raw marinade.
