  • 2 teaspoons ground cumin

  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated

For the Tikka Masala Sauce:

  • 2 tablespoons oil or ghee
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions for Culinary Success:

  1. Marinate the Chicken: In a bowl, combine the yogurt, lemon juice, spices, minced garlic, grated ginger, salt, and pepper to create the marinade. Add the chicken pieces and toss until evenly coated. Cover and refrigerate for at least 1 hour, or overnight for maximum flavor.

  5. Grill or Broil the Chicken: While the sauce is simmering, preheat your grill or broiler to medium-high heat. Thread the marinated chicken onto skewers and grill or broil for 6-8 minutes per side, or until cooked through and slightly charred.
  6. Combine Chicken and Sauce: Once the chicken is cooked, remove it from the skewers and add it to the simmering sauce. Stir in the heavy cream or coconut milk and let the mixture simmer for an additional 5 minutes to heat through and meld the flavors together.
