This French-inspired recipe, also known as œufs en cocotte, delivers a rich, velvety texture with delicate eggs nestled in a creamy base. Ideal for lazy weekend brunches or an elegant breakfast for one, this dish is versatile, comforting, and full of flavour.

Why You’ll Love Creamy Baked Eggs

Creamy baked eggs combine soft-cooked eggs with rich cream, melted cheese, and your choice of herbs or add-ins like spinach, mushrooms, or smoked salmon. They’re baked gently in ramekins until the whites are set and the yolks are still runny—perfect for scooping up with crusty bread. Ingredients

To make 2 servings of creamy baked eggs, you’ll need:

  • 4 large eggs
  • 4 tbsp double cream (heavy cream)
  • 30g grated cheese (Gruyère, cheddar, or Parmesan work well)
  • Salt and black pepper to taste
  • A pinch of nutmeg (optional)
  • Fresh herbs (chives, parsley, or thyme) for garnish
  • Butter (for greasing ramekins)

  • Sautéed spinach or mushrooms
  • Chopped cooked bacon or ham
  • Smoked salmon
  • A touch of Dijon mustard in the cream for extra depth

Instructions

  1. Preheat your oven to 180°C (160°C fan) or 350°F. Place a deep baking dish or roasting tray in the oven—this will be used for a water bath later.
  2. Lightly grease two ramekins with butter. Pour 2 tablespoons of cream into each one and sprinkle half the grated cheese over the cream.
  3. Crack two eggs into each ramekin, being careful not to break the yolks. Season with salt, pepper, and a pinch of nutmeg if using. Sprinkle the remaining cheese on top.
  4. Carefully place the ramekins into the preheated baking dish. Fill the dish with boiling water until it reaches halfway up the sides of the ramekins. This gentle water bath helps the eggs cook evenly.
  5. Bake for 12–15 minutes, or until the egg whites are just set and the yolks remain soft. Keep an eye on them—overbaking will lead to firm yolks.
  6. Remove the ramekins from the water bath, garnish with fresh herbs, and serve hot with toast, sourdough, or warm baguette slices.

Tips for Perfect Creamy Baked Eggs

Use room temperature eggs to ensure even cooking. Don’t skip the water bath, as it prevents the eggs from cooking too quickly and curdling the cream. Experiment with flavours—swap cream for crème fraîche for a tangy version, or add a spoonful of pesto or tomato chutney for extra flair. Make it heartier by serving with sautéed greens, roasted potatoes, or a light salad on the side.
