Classic Cabbage Dishes with Big Flavour: 5 Easy Recipes

Cabbage is one of the most versatile and affordable vegetables in South African kitchens. Packed with nutrients and naturally sweet when cooked, it forms the base of many classic dishes. When paired with the right seasonings and accompaniments, cabbage can shine as both a side dish and a main component. Here are five classic cabbage dishes with full recipes to bring big flavour to your table.

1. Braised Cabbage with Bacon and Onions

Ingredients:

  • 1 medium head of cabbage, shredded
  • 100 g bacon, chopped
  • 1 medium onion, sliced
  • 2 tbsp cooking oil
  • 125 ml chicken or vegetable stock
  • ½ tsp sugar
  • Salt and black pepper, to taste

Method:

  1. Heat oil in a large pan over medium heat. Add bacon and cook until slightly crispy.
  2. Add sliced onions and sauté until soft and translucent.
  3. Add shredded cabbage, sugar, salt, and black pepper. Stir to combine.
  4. Pour in stock, cover, and simmer for 15–20 minutes until the cabbage is tender.
  5. Adjust seasoning and serve warm with roasted meat or stew.

2. Cabbage and Carrot Stir-Fry

Ingredients:

  • 1 small cabbage, shredded
  • 2 medium carrots, julienned
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Black pepper, to taste

Method:

  1. Heat vegetable oil in a wok or large frying pan over medium-high heat.
  2. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
  3. Add cabbage and carrots, tossing continuously for 5–7 minutes until slightly tender but still crisp.
  4. Drizzle with soy sauce and sesame oil, season with black pepper, and toss to coat.
  5. Serve immediately as a side dish with rice or noodles.

3. Traditional South African Spiced Cabbage

Ingredients:

  • 1 medium cabbage, shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp paprika
  • 1 tbsp tomato paste
  • 2 tbsp cooking oil
  • Salt and black pepper, to taste

Method:

  1. Heat oil in a large pan over medium heat. Sauté onions and garlic until soft.
  2. Add curry powder, paprika, and tomato paste, and cook for 1–2 minutes to release the flavours.
  3. Stir in shredded cabbage, cover, and cook for 15 minutes, stirring occasionally.
  4. Season with salt and pepper. Serve with pap, rice, or grilled meats.

4. Creamy Coleslaw

Ingredients:

  • 3 cups shredded cabbage
  • 1 cup grated carrots
  • 100 g mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • Salt and black pepper, to taste

Method:

  1. In a large bowl, combine shredded cabbage and grated carrots.
  2. In a separate bowl, whisk together mayonnaise, vinegar, sugar, salt, and black pepper.
  3. Pour the dressing over the cabbage mixture and toss until evenly coated.
  4. Chill for 30 minutes before serving to allow flavours to meld. Perfect as a side with braais or sandwiches.

5. Cabbage and Bean Pot

Ingredients:

  • 1 medium cabbage, chopped
  • 1 cup cooked sugar beans or lentils
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp cooking oil
  • 250 ml vegetable or chicken stock
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste

Method:

  1. Heat oil in a pot over medium heat. Sauté onions and garlic until fragrant.
  2. Add chopped cabbage and smoked paprika. Stir to combine.
  3. Add cooked beans and stock. Cover and simmer for 20 minutes until cabbage is tender.
  4. Adjust seasoning and serve as a hearty side or main dish.
