Whether you’re hosting a brunch or simply want to treat yourself to a delicious homemade treat, this coffee cake recipe will satisfy your cravings and add a touch of sweetness to your day. Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 2 teaspoons vanilla extract

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed

For the Glaze:

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs. You can use a pastry cutter, two knives, or your fingers to incorporate the butter.
  4. In a separate bowl, whisk together the sour cream, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. In a small bowl, prepare the streusel topping. Mix together the flour, brown sugar, and cinnamon. Add the cold cubed butter and use your fingers to pinch the ingredients together until crumbly.
  6. Pour half of the batter into the prepared baking pan and spread it evenly. Sprinkle half of the streusel topping over the batter. Repeat the process with the remaining batter and streusel topping.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean. The cake should be golden brown and slightly pulling away from the sides of the pan.
  8. While the cake is cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and pourable. Adjust the consistency by adding more milk if needed.
  9. Once the cake has cooled slightly, drizzle the glaze over the top. Allow the glaze to set for a few minutes.
