Crispy air fryer corn ribs are a delicious way to transform ordinary sweetcorn into a crunchy, flavour-packed snack that everyone will love. Coated in smoky paprika, garlic and a touch of chilli, these golden corn ribs develop beautifully charred edges while staying juicy and sweet inside. They are easy to prepare, require very little oil and cook much faster than traditional oven-roasted corn. The real magic happens when you serve them with fiery chilli mayo, a creamy dipping sauce that adds a spicy kick to every bite. Whether you are planning a weekend braai, a casual gathering or a quick afternoon snack, these corn ribs are guaranteed to impress. You can serve them as a side dish, a party appetiser or a fun alternative to chips and wedges. With a handful of everyday ingredients and a reliable air fryer, you can make crispy, smoky corn ribs right in your own kitchen.

Crispy Air Fryer Corn Ribs Recipe

Prep time: 15 minutes
Cooking time: 10 to 15 minutes per batch
Servings: 4

Ingredients

For the corn ribs:

  • 4 fresh corn cobs
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chilli powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh coriander, optional

For the fiery chilli mayo:

  • ½ cup mayonnaise
  • 1 to 2 tablespoons sriracha or your favourite hot sauce
  • 1 teaspoon lemon or lime juice
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • A pinch of salt

Method

  1. Prepare the corn: Remove the husks and silk, then rinse and dry the corn cobs. Trim the ends so they sit securely on a chopping board.
  2. Cut into ribs: Carefully cut each cob in half crosswise, then cut each piece lengthwise into quarters to create rib-shaped wedges. Corn cobs are hard, so use a large, sharp knife and a stable chopping board. Keep your hands clear of the blade. If cutting feels unsafe, ask a butcher to quarter the cobs or use pre-cut corn ribs.
  3. Mix the seasoning: In a small bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, chilli powder, salt and black pepper.
  4. Coat the corn: Brush or toss the corn ribs with the seasoning mixture, ensuring the kernels are evenly coated.
  5. Preheat the air fryer: Set the air fryer to 200°C for about 3 minutes, following your appliance’s instructions.
  6. Air fry: Arrange the corn ribs in a single layer with space between them. Cook at 200°C for 10 to 15 minutes, turning halfway through, until the kernels are tender and the edges are golden and slightly crisp. Cook in batches if necessary.
  7. Prepare the chilli mayo: While the corn cooks, mix the mayonnaise, hot sauce, lemon or lime juice, smoked paprika, garlic powder and salt in a small bowl.
  8. Serve: Transfer the hot corn ribs to a serving plate, sprinkle with fresh coriander if desired and serve immediately with the chilli mayo.

Tips for Perfectly Crispy Corn Ribs

  • Dry the corn well: Excess moisture can prevent the seasoning from sticking properly and slow down browning.
  • Avoid overcrowding: Leave space between the ribs so hot air can circulate around the kernels.
  • Adjust the seasoning: Add more smoked paprika for a deeper smoky flavour or extra chilli powder for more heat.
  • Turn halfway through cooking: This helps the corn cook more evenly and develop colour on different sides.
  • Check your air fryer: Cooking times vary between appliances, so check the corn regularly during the final few minutes.
  • Handle hot corn carefully: Corn ribs curl as they cook and can become very hot, so allow them to cool briefly before eating.

Easy Variations

Cheesy corn ribs: Sprinkle grated Parmesan or a vegetarian hard cheese over the corn immediately after cooking.

Lime and coriander corn ribs: Add fresh lime juice and chopped coriander before serving for a bright, zesty finish.

Extra-spicy corn ribs: Increase the chilli powder and add a few drops of hot sauce to the seasoning mixture.

Vegan corn ribs: Use vegan mayonnaise for the dipping sauce and check that any additional toppings are plant-based.

Honey-smoked corn ribs: Add a small drizzle of honey after cooking for a sweet and smoky contrast. Avoid adding too much honey before air frying because it can burn at high temperatures.

What to Serve with Air Fryer Corn Ribs

These corn ribs pair well with grilled vegetables, burgers, wraps and roasted potatoes. They are also a great addition to a braai spread, especially when served alongside grilled mushrooms, veggie skewers or other barbecue favourites. For a party platter, arrange them on a large plate with chilli mayo in the centre and lime wedges around the edges. Serve them fresh from the air fryer for the best texture, as they gradually soften as they cool.

Crispy air fryer corn ribs are an easy way to give sweetcorn a delicious makeover with smoky spices, golden edges and a creamy, fiery dipping sauce. The combination of smoked paprika, garlic and chilli creates bold flavour without requiring a long list of ingredients. For the crispiest results, dry the corn thoroughly, coat it evenly and leave enough room in the air fryer for hot air to circulate. The chilli mayo adds a tangy, spicy finish, but you can adjust the heat to suit everyone at the table. Try different variations with lime, cheese or fresh herbs to make the recipe your own. These corn ribs are perfect for casual snacks, braais, game-day spreads or whenever you want a quick and flavourful side dish. Serve them hot, keep the dipping sauce nearby and enjoy every smoky, crunchy bite.
