Halloumi is a semi-hard, salty cheese from Cyprus that has taken kitchens worldwide by storm. Its unique texture allows it to be fried, grilled, or baked without melting completely, giving it a crispy exterior while remaining soft and squeaky inside. This versatile cheese works in a variety of dishes, from salads and sandwiches to mains and snacks. Its rich flavour and satisfying texture make halloumi an easy way to elevate everyday meals. Here are some halloumi dishes you need to try.

Grilled Halloumi Salad

Grilled halloumi adds a salty, crunchy contrast to fresh greens and vegetables.

Ingredients:

  • 200 g halloumi, sliced
  • 2 cups mixed salad greens
  • 1 red bell pepper, sliced
  • 1 cucumber, diced
  • 1 handful cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Black pepper to taste

Method:
Heat a non-stick pan over medium heat. Lightly brush halloumi slices with olive oil and grill for 2–3 minutes on each side until golden and crispy. Toss salad greens, cucumber, tomatoes, and bell pepper in olive oil and lemon juice. Place grilled halloumi on top. Serve immediately.

Halloumi and Vegetable Skewers

Perfect for braais or oven roasting, these skewers are colourful and flavourful.

Ingredients:

  • 200 g halloumi, cubed
  • 1 zucchini, sliced
  • 1 red onion, chopped
  • 1 red and 1 yellow bell pepper, chopped
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste

Method:
Preheat grill or oven to 200°C. Thread halloumi and vegetables onto skewers. Brush with olive oil, sprinkle paprika, salt, and pepper. Grill or bake for 10–12 minutes until halloumi is golden and vegetables are tender. Serve hot.

Halloumi Burger

A vegetarian alternative to the classic beef burger, halloumi adds a satisfying crunch.

Ingredients:

  • 2 burger buns
  • 150 g halloumi, sliced
  • Lettuce leaves
  • Tomato slices
  • Red onion, sliced
  • 1 tbsp olive oil
  • Your favourite burger sauce

Method:
Heat olive oil in a pan over medium heat. Fry halloumi slices for 2–3 minutes each side until golden. Toast buns lightly. Assemble burgers with lettuce, tomato, onion, fried halloumi, and sauce. Serve immediately.

Baked Halloumi with Tomatoes and Herbs

Ingredients:

  • 200 g halloumi, sliced
  • 4 medium tomatoes, chopped
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • Fresh basil leaves for garnish

Method:
Preheat oven to 180°C. Place tomatoes in a baking dish, drizzle with olive oil, and sprinkle oregano. Arrange halloumi slices on top. Bake for 15–20 minutes until halloumi is lightly golden and tomatoes softened. Garnish with fresh basil before serving.

Halloumi Tacos

A modern twist on tacos, combining halloumi with fresh vegetables and sauces.

Ingredients:

  • 200 g halloumi, sliced and grilled
  • 4 small tortillas
  • ½ cup shredded cabbage
  • 1 small avocado, sliced
  • 2 tbsp sour cream or Greek yogurt
  • Lime wedges

Method:
Grill halloumi slices until crispy outside. Warm tortillas. Assemble tacos with cabbage, avocado, halloumi, and a dollop of sour cream. Squeeze lime over the top before serving.
