Ingredients
- 500 g raw king prawns, peeled and deveined
- 2 tablespoons olive oil
- 3 garlic cloves, finely chopped
- ½ fresh red chilli, finely chopped (or ½ teaspoon red chilli flakes)
- 60 ml dry white wine
- ½ lemon, juiced
- Salt and freshly ground black pepper, to taste
- Handful of fresh parsley, chopped
Instructions
- Prepare the prawns by patting them dry with paper towels to ensure a good sear.
- Heat the olive oil in a large pan over medium-high heat. Add the chopped garlic and chilli, and sauté for about 30 seconds until fragrant, but not browned.
- Add the prawns to the pan in a single layer. Cook for 2 minutes on one side until they start to turn pink.
- Flip the prawns, then pour in the white wine. Let it simmer for 1–2 minutes to reduce slightly.
- Season with salt and pepper to taste. Cook until the prawns are fully pink and opaque but still tender—about 2 more minutes.
- Remove from heat, squeeze over the lemon juice, and sprinkle with chopped parsley.
- Serve immediately with crusty bread, over pasta, or with rice and grilled vegetables.
