The Very Best Way to Cook Cherry Tomatoes for Maximum Flavour

Cherry tomatoes are little flavour bombs, bursting with natural sweetness and acidity. While they’re delicious raw, cooking them intensifies their taste, turning them into a rich, savory-sweet delicacy. Whether you’re tossing them into pasta, layering them on toast, or spooning them over grilled meats, there’s one method that truly brings out their best: slow-roasting.

Slow-roasting cherry tomatoes concentrates their natural sugars, softens their skins, and releases their juices without sacrificing their integrity. The result is a deeply flavorful, slightly caramelised tomato that retains its structure while delivering intense umami. Unlike quick pan-frying, which can burst the tomatoes and leave them watery, slow-roasting allows every part of the tomato to develop complexity.

To get the best results, start with about 500 grams of cherry tomatoes. If they’re large, cut them in half. Preheat your oven to 150°C and line a baking tray with parchment paper. Arrange the tomatoes in a single layer, cut-side up if halved. Drizzle with three tablespoons of extra virgin olive oil, then sprinkle over one teaspoon of sea salt, half a teaspoon of freshly ground black pepper, and three thinly sliced garlic cloves. For added aroma, throw in a few sprigs of fresh thyme or rosemary. Optionally, a teaspoon of balsamic vinegar added after roasting will deepen the flavour even more.

Roast the tomatoes for 1.5 to 2 hours, checking occasionally. They should shrivel slightly, intensify in colour, and develop light caramelisation around the edges. Once done, let them cool slightly before using or storing.

These tomatoes are incredibly versatile. Spoon them over toasted bread with ricotta, stir into pasta, add to salads or grain bowls, or serve alongside grilled meat or fish. They also keep well in the fridge for up to a week, making them a handy ingredient to elevate everyday meals.

For an extra punch, try using mixed-colour cherry tomatoes or finish with a sprinkle of smoked paprika. If your tomatoes are a bit tart, a pinch of sugar before roasting can help balance the flavour.

Slow-roasting is a simple yet powerful technique that transforms cherry tomatoes into rich, savoury-sweet gems. It’s the ultimate way to draw out their natural character and elevate your cooking with minimal effort.
