Ingredients:

  • 2 tablespoons oil (such as vegetable or peanut oil)
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 sweet potato, peeled and diced
  • 2 carrots, peeled and sliced
  • 1 red bell pepper, diced
  • 1 can (400 grams) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 cup natural peanut butter (smooth or chunky)
  • 1 cup cooked chicken or beef, shredded (optional)
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped (for garnish)
  • Crushed peanuts (for garnish)

Instructions:

  1. Heat the oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Add the minced garlic and grated ginger to the pot and cook for another minute, stirring constantly.
  3. Stir in the ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for a minute to toast the spices and release their flavors.
  4. Add the diced sweet potato, sliced carrots, and diced red bell pepper to the pot. Stir well to coat the vegetables with the spices.
  5. Pour in the diced tomatoes with their juices and the vegetable or chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 15-20 minutes, or until the vegetables are tender.
  6. Stir in the peanut butter and cooked chicken or beef (if using). Mix well until the peanut butter is fully incorporated into the stew.
  7. Simmer the stew for another 10 minutes to allow the flavors to meld together. If the stew becomes too thick, you can add more broth to achieve the desired consistency.
  8. Season with salt and pepper to taste. Adjust the spices and cayenne pepper according to your preference for heat.
