  • 1/2 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/4 cup hot water
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, combine the sugar, melted butter, and egg. Mix well.
  4. Gradually add the dry ingredients to the sugar mixture, alternating with the milk. Stir until just combined.
  5. In a small bowl, mix the apricot jam, hot water, and vinegar until well blended.
  6. Add the jam mixture to the batter and stir until fully incorporated.
  7. Divide the batter evenly among the muffin cups, filling each one about two-thirds full.
  8. Bake for approximately 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. While the muffins are baking, prepare the sauce. In a saucepan, melt the butter over medium heat. Add the sugar, cream, hot water, and vanilla extract. Stir until the sugar has dissolved and the sauce is smooth.
  10. Once the muffins are baked, remove them from the oven and allow them to cool for a few minutes.
  11. Pour the warm sauce over the muffins, allowing it to soak in. Reserve some sauce for serving.
