From thin, delicate crepes in France to hearty, spiced pancakes in Ethiopia, each tradition reflects local ingredients, customs, and culinary history. Exploring global pancake traditions allows you to experience diverse flavors and textures, while giving you inspiration to recreate these dishes at home.

Whether sweet or savory, pancakes provide a canvas for creativity. Many countries have signature fillings, toppings, or techniques that transform simple batter into iconic dishes. The following guide highlights popular pancake traditions from around the world and includes authentic recipes to try in your own kitchen.

French Crepes

French crepes are thin, delicate pancakes that can be filled with sweet or savory ingredients.

Ingredients

125 grams all-purpose flour
2 large eggs
300 ml milk
30 grams melted butter
Pinch of salt
Optional sweet fillings: Nutella, fruit, whipped cream
Optional savory fillings: Ham, cheese, sautéed mushrooms

Instructions

  1. In a bowl, whisk flour, eggs, and milk until smooth. Stir in melted butter and salt. Let batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease with butter. Pour a small amount of batter, tilting to spread evenly.
  3. Cook for 1–2 minutes until edges lift, then flip and cook another minute.
  4. Fill with sweet or savory ingredients, fold, and serve immediately.

American Buttermilk Pancakes

Fluffy, thick pancakes are a classic American breakfast, often served with syrup and butter.

Ingredients

200 grams all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
240 ml buttermilk
1 large egg
30 grams melted butter

Instructions

  1. In a bowl, combine flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk buttermilk, egg, and melted butter. Mix wet and dry ingredients gently; batter should remain slightly lumpy.
  3. Heat a non-stick pan over medium heat. Pour 60 ml batter per pancake and cook until bubbles appear on the surface. Flip and cook another 1–2 minutes.
  4. Serve warm with maple syrup, fresh fruit, or a dollop of whipped cream.

Russian Blini

Blini are small, yeasted pancakes traditionally served with savory toppings like caviar or smoked salmon.

Ingredients

200 grams all-purpose flour
1 teaspoon active dry yeast
250 ml warm milk
1 large egg
50 grams melted butter
Pinch of salt

Instructions

  1. Dissolve yeast in warm milk and let sit for 5–10 minutes.
  2. In a bowl, combine flour, egg, melted butter, and salt. Mix with yeast mixture until smooth. Let rise for 1 hour.
  3. Heat a lightly oiled skillet over medium heat. Pour small spoonfuls of batter to make 5–7 cm pancakes. Cook 1–2 minutes per side until golden.
  4. Serve with sour cream, smoked salmon, or caviar.

Ethiopian Injera

Injera is a sourdough flatbread made from teff flour, serving as both pancake and utensil in Ethiopian cuisine.

Ingredients

250 grams teff flour (or mix with all-purpose flour)
300 ml water
Pinch of salt

Instructions

  1. Mix teff flour with water to form a thin batter. Cover and let ferment at room temperature for 24–48 hours.
  2. Add a pinch of salt and stir gently.
  3. Heat a non-stick pan or skillet over medium heat. Pour batter to cover the surface thinly. Cook until holes form on the surface and the edges lift, then remove.
  4. Serve with Ethiopian stews, lentils, or vegetables.

Japanese Okonomiyaki

Okonomiyaki are savory Japanese pancakes filled with cabbage, seafood, or meat, topped with sauce and mayonnaise.

Ingredients

150 grams all-purpose flour
100 ml dashi or water
2 eggs
200 grams shredded cabbage
Optional: sliced pork belly or seafood
Toppings: okonomiyaki sauce, mayonnaise, bonito flakes, nori

Instructions

  1. In a bowl, mix flour, dashi, and eggs to form a batter. Fold in shredded cabbage and optional proteins.
  2. Heat a skillet over medium heat with a little oil. Pour half the batter and flatten into a circle. Cook 3–4 minutes per side until golden and cooked through.
  3. Serve topped with okonomiyaki sauce, mayonnaise, bonito flakes, and nori.
