Healthy South African Bobotie Stuffed Bell Peppers: A Delicious Fusion of Flavors.

South African cuisine is renowned for its diverse and vibrant flavours, and one dish that stands out is Bobotie. Traditionally made with minced meat, spices, and an egg-based topping, Bobotie is a beloved comfort food in South Africa. In this recipe, we give a healthy twist to this classic dish by transforming it into Bobotie Stuffed Bell Peppers. By combining the rich flavours of Bobotie with the freshness of bell peppers, we create a nutritious and satisfying meal that is both visually appealing and delicious.

Ingredients:

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 500 grams lean ground beef or lamb
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 tablespoon tomato paste
  • 2 tablespoons apricot jam (optional)
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons white vinegar
  • 1 cup breadcrumbs (preferably whole wheat)
  • 1 cup low-fat milk
  • 2 eggs
  • Salt and pepper to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Preheat the oven to 180°C (350°F). Prepare the bell peppers by cutting off the tops and removing the seeds and membranes. Rinse them under cold water and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic and sauté until the onion becomes translucent.
  3. Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a wooden spoon as it cooks.
  4. Sprinkle the curry powder, cumin, coriander, and turmeric over the meat mixture. Stir well to combine and cook for another 2-3 minutes to allow the spices to release their flavors.
  5. Stir in the tomato paste, apricot jam (if using), Worcestershire sauce, and white vinegar. Season with salt and pepper to taste. Cook for an additional 2 minutes.
  6. In a separate bowl, mix together the breadcrumbs and milk until well combined. Let it sit for a few minutes until the breadcrumbs have absorbed the milk.
  7. Add the breadcrumb mixture to the meat mixture and cook for another 5 minutes, stirring occasionally, until the mixture thickens. Remove from heat.
  8. In a small bowl, beat the eggs and then fold them into the meat mixture until fully incorporated.
  9. Place the bell peppers in a baking dish and fill them generously with the Bobotie mixture. Cover the dish with foil and bake for 30-35 minutes, or until the bell peppers are tender.
  10. Remove the foil and continue baking for an additional 10-15 minutes until the tops are golden brown.
  11. Once cooked, remove from the oven and let the stuffed bell peppers cool for a few minutes. Garnish with fresh coriander leaves.
