Ingredients

For the Marinade:

  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon garam masala
  • 1 tablespoon paprika
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste

For the Chicken:

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • Wooden skewers (soaked in water for 30 minutes to prevent burning)

Instructions

Step 1: Prepare the Marinade

  1. Mix the Ingredients: In a large bowl, combine the yogurt, lemon juice, ginger-garlic paste, cumin, coriander, garam masala, paprika, turmeric, red chili powder, and salt. Mix well to form a smooth marinade.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight. This allows the chicken to absorb all the flavors.

Step 2: Prepare for Cooking

  1. Preheat the Grill/Oven: Preheat your grill to medium-high heat or your oven to 400°F (200°C). If using an oven, line a baking sheet with aluminum foil and place a wire rack on top.
  2. Thread the Chicken: Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a small gap between each piece to ensure even cooking.

Step 3: Cook the Chicken

  1. Grill Method: Lightly oil the grill grates. Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally, until the chicken is fully cooked and has a nice char on the outside.
  2. Oven Method: Place the skewers on the prepared wire rack and bake for 15-20 minutes. For extra char, broil the skewers for an additional 2-3 minutes on high heat, watching carefully to avoid burning.

  1. Garnish: Once cooked, transfer the Chicken Tikka to a serving platter. Garnish with fresh cilantro leaves and lemon wedges.
  2. Serve: Serve hot with mint chutney, naan, or rice. For an added touch, you can also serve it with sliced onions and a sprinkle of chaat masala.

  • Marination Time: The longer the chicken marinates, the more flavorful it will be. Overnight marination yields the best results.
