Ingredients:

For the Curry Paste:

  • 1 kg chicken, lamb, or beef, cubed (traditionally, mutton is used)
  • 2 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 cup frozen peas
  • 2 cups chicken or beef broth
  • 1 cup coconut milk
  • Fresh coriander leaves, chopped (for garnish)
  • Cooked rice or bread, for serving

Instructions:

Prepare the Curry Paste:

  • In a blender or food processor, combine the chopped onions, minced garlic, grated ginger, and chopped tomatoes. Blend until smooth.
  • Heat vegetable oil in a large pot over medium heat. Add the curry paste and cook, stirring frequently, for about 5-7 minutes, or until fragrant and the onions are soft.
  • Add the curry powder, ground cumin, ground coriander, turmeric, paprika, chili powder, and salt. Stir to combine and cook for another 2-3 minutes.

Cook the Protein:

  • Add the cubed meat of your choice (chicken, lamb, or beef) to the pot with the curry paste. Cook, stirring occasionally, until the meat is browned on all sides.
  • If using lamb or beef, you may need to cook for a longer time until the meat is tender.

Add Vegetables and Liquid:

  • Once the meat is browned, add the cubed potatoes, sliced carrots, and frozen peas to the pot. Stir to combine.
  • Pour in the chicken or beef broth and coconut milk, ensuring that the ingredients are fully submerged in the liquid.
