How to Make Roast Beef at Home

Roast beef is a classic dish that’s perfect for family dinners, special occasions, or even meal prep. With a few simple steps, you can create a tender, flavorful roast beef at home. Here’s a guide to help you achieve the perfect roast every time.

Ingredients

For a 4-6 serving roast beef, you’ll need:

  • 1.5–2 kg (3–4 lb) beef roast (top sirloin, ribeye, or eye of round)
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup beef broth or red wine (optional, for basting)

Instructions

1. Prepare the Beef

  • Remove the roast from the refrigerator 30 minutes before cooking to allow it to come to room temperature.
  • Preheat your oven to 220°C (425°F).
  • Pat the beef dry with paper towels to help it brown evenly.

2. Season the Roast

  • In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper to create a paste.
  • Rub the mixture all over the beef, ensuring an even coating.

3. Sear the Roast

  • Heat a large oven-safe skillet or roasting pan over medium-high heat. Add a little olive oil.
  • Sear the beef on all sides (about 2 minutes per side) until a brown crust forms. This seals in the juices and enhances the flavor.

4. Roast the Beef

  • Transfer the beef to the oven. Roast for 15 minutes at 220°C (425°F) to create a crust.
  • Reduce the temperature to 160°C (325°F) and continue roasting for the desired doneness:
    • Rare: 50°C (120°F), about 20 minutes per pound.
    • Medium-rare: 57°C (135°F), about 25 minutes per pound.
    • Medium: 63°C (145°F), about 30 minutes per pound.
  • Use a meat thermometer to check the internal temperature for accuracy.

5. Rest the Roast

  • Remove the roast from the oven and place it on a cutting board. Tent it with aluminum foil and let it rest for 15–20 minutes. This allows the juices to redistribute, making the meat tender and juicy.

6. Slice and Serve

  • Slice the roast beef thinly against the grain for maximum tenderness. Serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad.

Tips for Perfect Roast Beef

  • Choose the right cut: Top sirloin and ribeye are great for tenderness, while eye of round is leaner and more affordable.
  • Use a meat thermometer: This ensures you achieve the perfect level of doneness.
  • Don’t skip resting: Resting the meat is crucial for juicy and flavorful results.
  • Add flavor with a jus: Use the pan drippings to make a simple gravy or jus by deglazing the pan with beef broth or wine.
