Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup freshly squeezed orange juice
  • Zest of 1 orange

  • 1 cup powdered sugar
  • 2-3 tablespoons freshly squeezed orange juice

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This will take about 3-4 minutes.
  4. Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter-sugar mixture, alternating with the orange juice. Begin and end with the dry ingredients, mixing just until combined after each addition. Be careful not to overmix.
  6. Stir in the orange zest, ensuring it is evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. The cake should be lightly golden and springy to the touch.
  9. While the cake is baking, prepare the orange glaze. In a small bowl, whisk together the powdered sugar and freshly squeezed orange juice until smooth and pourable.
  10. Once the cake is out of the oven, let it cool in the pan for about 10 minutes. Then transfer it to a wire rack set over a baking sheet.
  11. Drizzle the orange glaze over the warm cake, allowing it to soak into the cake and create a sweet and tangy glaze.
  12. Let the cake cool completely before slicing and serving.
