Pound Cake Recipe

Pound cake is a classic dessert known for its rich flavor, tender crumb, and simple ingredients. Traditionally, it was made using one pound each of butter, sugar, eggs, and flour, which is how it got its name. Today, bakers adapt the original formula to achieve a lighter texture while keeping the buttery flavor. This recipe will guide you step by step so you can bake a perfect pound cake at home.

Ingredients

  • 225 g unsalted butter, softened
  • 200 g granulated sugar
  • 4 large eggs, room temperature
  • 200 g all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 60 ml whole milk or cream

Equipment Needed

  • Stand mixer or hand mixer
  • Mixing bowls
  • 23 x 13 cm loaf pan (greased and floured)
  • Cooling rack

Step-by-Step Instructions

1. Prepare the Pan and Oven
Preheat your oven to 175°C. Grease your loaf pan with butter, then lightly dust it with flour. This prevents sticking and ensures the cake releases easily.

2. Cream Butter and Sugar
In a large mixing bowl, beat the butter and sugar together for about 3 to 5 minutes until pale and fluffy. This step incorporates air into the batter, giving the pound cake a tender crumb.

3. Add the Eggs
Crack in the eggs one at a time, beating well after each addition. This helps create a smooth, even mixture. Add the vanilla extract with the last egg.

4. Mix the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold this into the butter mixture in three parts, alternating with the milk. Start and end with the dry ingredients. Mix just until combined to avoid overworking the batter.

5. Bake the Cake
Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.

6. Cool and Serve
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve once it has cooled to room temperature.

Tips for Success

  • Use room temperature ingredients for even mixing.
  • Do not overmix once the flour is added. This prevents a dense texture.
  • For extra flavor, add lemon zest, almond extract, or a swirl of fruit jam before baking.
  • If you want a crustier top, sprinkle a little sugar on the batter before it goes into the oven.

Serving Suggestions
Pound cake can be enjoyed plain, but it also pairs well with fresh berries, whipped cream, or a drizzle of chocolate sauce. You can toast slices and serve with butter for breakfast, or cube it to use in trifles and layered desserts.

Storage
Store pound cake in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze tightly wrapped slices for up to 2 months.

This pound cake recipe delivers a rich, buttery flavor with a moist crumb that makes it versatile for any occasion. By mastering the basic method, you can customize it with flavors like citrus, chocolate, or spices. Whether served plain or dressed up, pound cake remains a timeless dessert that never fails to impress.
