This one-pan dish brings together tender shrimp, juicy cherry tomatoes, and fresh spinach in a garlicky, buttery orzo base—all cooked in under 30 minutes.

Orzo, a rice-shaped pasta, cooks faster than traditional pasta and absorbs flavor beautifully. Paired with seared shrimp and fresh vegetables, it becomes a balanced, protein-packed meal that’s perfect for busy weeknights or a casual dinner with friends.

To make this dish shine, use fresh ingredients and don’t overcook the shrimp. The secret lies in layering flavors—starting with a quick sauté of garlic and onion, followed by a splash of white wine or broth to deglaze, and ending with a swirl of Parmesan for creaminess.

Ingredients

  • 200g orzo pasta
  • 300g peeled and deveined shrimp
  • 150g cherry tomatoes, halved
  • 2 large handfuls of baby spinach
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 500ml chicken or vegetable broth
  • 50ml dry white wine (optional)
  • 30g grated Parmesan cheese
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for heat)
  • Fresh parsley or basil, for garnish

Method

  1. Sear the Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season shrimp with salt and pepper. Sear for 1–2 minutes per side until pink and cooked through. Remove and set aside.
  2. Sauté Aromatics: In the same pan, add remaining olive oil and butter. Sauté onion for 2–3 minutes until soft. Add garlic and cook for 30 seconds until fragrant.
  3. Add Orzo: Stir in the dry orzo and toast for 1–2 minutes. This step adds a subtle nutty flavor.
  4. Deglaze and Simmer: Pour in the wine (if using) and let it reduce slightly. Then add broth, bring to a boil, reduce heat, and simmer uncovered for 8–10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  5. Add Tomatoes and Spinach: Stir in the cherry tomatoes and cook for 2 minutes. Add spinach and cook until wilted.
  6. Finish the Dish: Return the shrimp to the pan, stir in Parmesan cheese, and adjust seasoning with salt, pepper, and red pepper flakes if desired.
  7. Serve and Garnish: Plate the orzo, garnish with chopped parsley or basil, and serve hot.
