Cherry pie is a delightful dessert that captures the essence of summer with its vibrant red color and sweet-tart flavor. This classic pie is a perfect way to showcase the juicy goodness of cherries. In this article, we will share a delicious recipe for homemade cherry pie that will transport you to sunny orchards with each bite.

Ingredients:

For the Pie Crust:

  • 2 and 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and cut into small cubes
  • 1/4 to 1/2 cup ice water

For the Cherry Filling:

  • 4 cups fresh cherries, pitted (or you can use frozen cherries, thawed)
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon almond extract (optional)
  • 1 tablespoon unsalted butter, cut into small cubes

Instructions:

  1. Prepare the Pie Crust:
    In a large mixing bowl, whisk together the all-purpose flour and salt. Add the chilled butter cubes and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape them into disks, and wrap them in plastic wrap. Refrigerate for at least 1 hour or overnight.
  2. Preheat and Prepare:
    Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out one portion of the chilled pie crust to fit a 9-inch pie dish. Carefully transfer the rolled-out dough to the pie dish and press it gently into the bottom and sides. Trim any excess dough hanging over the edges.
  3. Make the Cherry Filling:
    In a large mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and almond extract (if using). Gently toss until the cherries are evenly coated.
  4. Assemble the Pie:
    Pour the cherry filling into the prepared pie crust, spreading it out evenly. Dot the top of the filling with small cubes of unsalted butter.
  5. Roll Out the Top Crust:
    Roll out the remaining portion of the chilled pie crust and place it on top of the cherry filling. Trim any excess dough and seal the edges by crimping with a fork or your fingers. Cut a few slits in the top crust to allow steam to escape during baking.
  6. Bake to Perfection:
    Place the pie on a baking sheet to catch any drips. Bake in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbling. If the edges of the crust start to brown too quickly, cover them with aluminum foil.
  7. Cool and Serve:
    Allow the cherry pie to cool on a wire rack for at least 2 hours to allow the filling to set. Serve at room temperature or slightly warm, and consider pairing it with a scoop of vanilla ice cream for an extra touch of indulgence.
