Oatmeal cookies are a delightful treat that combines the comforting flavors of oats, cinnamon, and raisins. These cookies offer a wholesome and satisfying indulgence, perfect for a cozy afternoon snack or a sweet addition to any gathering. In this article, we will share a mouthwatering recipe for oatmeal cookies that are soft, chewy, and packed with flavor.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins (optional)

Instructions:

  1. Preheat and Prepare:
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mat to prevent sticking.
  2. Cream the Butter and Sugars:
    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. You can use an electric mixer or mix by hand using a wooden spoon.
  3. Add Eggs and Vanilla:
    Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Then, mix in the vanilla extract until well combined.
  4. Combine Dry Ingredients:
    In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt. Gradually add the dry mixture to the butter and sugar mixture, mixing until just combined.
  5. Add Oats and Raisins:
    Stir in the rolled oats until evenly incorporated into the dough. If desired, fold in the raisins for an extra burst of sweetness and texture.
  6. Shape and Bake:
    Using a cookie scoop or tablespoon, portion the dough onto the prepared baking sheet, leaving enough space between each cookie for spreading. You can flatten the dough slightly with your hands or the back of a spoon.
  7. Bake to Perfection:
    Place the baking sheet in the preheated oven and bake for 10-12 minutes or until the edges turn golden brown. The centers may still appear slightly soft but will firm up as the cookies cool.
  8. Cool and Enjoy:
    Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. As they cool, the cookies will develop a delightful chewy texture. Serve them with a glass of milk or store them in an airtight container for later enjoyment.
