Oatmeal raisin muffins are a delightful and nutritious twist on the classic oatmeal raisin cookie. Ingredients:

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup buttermilk

  • 3/4 cup raisins

Instructions:

  1. Preheat and Prepare:
    Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease the cups with cooking spray to prevent sticking.
  2. Mix the Dry Ingredients:
    In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, baking soda, ground cinnamon, and salt. Stir until well combined.
  3. Combine Wet Ingredients:
    In a separate bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract until well blended.
  4. Incorporate the Wet and Dry Ingredients:
    Pour the wet ingredients into the bowl with the dry ingredients and gently fold them together using a spatula. Stir until just combined, being careful not to overmix.
  5. Add Raisins:
    Fold in the raisins until evenly distributed throughout the batter. The plump and sweet raisins add bursts of flavor to every bite.
  6. Fill the Muffin Cups:
    Using a spoon or an ice cream scoop, divide the batter equally among the prepared muffin cups, filling each about three-quarters full.
  7. Bake to Perfection:
    Place the muffin tin in the preheated oven and bake for approximately 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden brown on top.
  8. Cool and Enjoy:
    Once baked, remove the muffin tin from the oven and allow the muffins to cool in the pan for a few minutes. Transfer them to a wire rack to cool completely or enjoy them while still warm. The comforting aroma of oats and cinnamon will entice you to indulge.
