Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold
  • 1 cup ice water
  • Extra flour for dusting

Instructions:

  1. Prepare the Dough:
    In a large mixing bowl, whisk together the all-purpose flour and salt. Cut the cold butter into small cubes and add them to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until it resembles coarse crumbs.
  2. Add Ice Water:
    Gradually add the ice water to the flour-butter mixture, mixing with a fork or your hands until the dough comes together. Be careful not to overmix. The dough should be slightly sticky but not wet.
  3. Shape the Dough:
    Transfer the dough onto a lightly floured surface and shape it into a rough rectangle. Roll the dough out into a long rectangle, about 1/4 inch thick. Fold the bottom third of the dough up, and then fold the top third down to create three layers. This is called a “single fold.” Rotate the dough 90 degrees and repeat the rolling and folding process two more times. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes between each fold.
  4. Chill and Rest:
    After the final fold, wrap the dough in plastic wrap and refrigerate it for at least 1 hour or overnight. This resting time allows the gluten to relax and the layers to develop.
  5. Roll and Fold:
    On a lightly floured surface, roll out the chilled dough into a large rectangle, about 1/4 inch thick. Fold the dough in half, bringing the shorter ends together, and then fold it in half again. Wrap the folded dough in plastic wrap and refrigerate for 30 minutes. Repeat this rolling and folding process two more times, chilling the dough between each fold.
  6. Final Preparation:
    After the final fold, wrap the dough in plastic wrap and refrigerate for at least 1 hour or overnight. At this point, your puff pastry is ready to be used in various sweet and savory recipes.
  7. Baking with Puff Pastry:
    When using the puff pastry in recipes, preheat your oven to the recommended temperature. Remove the chilled puff pastry from the refrigerator and let it sit at room temperature for a few minutes to soften slightly. Roll out the pastry to the desired thickness and cut into desired shapes. Place the prepared pastry on a baking sheet lined with parchment paper and bake according to your recipe’s instructions.
