Simple Maple Roast Brinjal Recipe

Brinjal, also known as eggplant, is a versatile vegetable that takes on flavor beautifully when roasted. Maple roast brinjal combines the natural creaminess of roasted eggplant with the sweet, caramelized notes of maple syrup, creating a dish that is both comforting and sophisticated. This recipe is perfect as a side, a salad topping, or a main vegetarian option.

Ingredients

  • 2 medium brinjals (eggplants), sliced into 1 cm thick rounds
  • 3 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp balsamic vinegar (optional, for extra tang)
  • Fresh herbs for garnish (parsley, thyme, or coriander)

Method

  1. Preheat the Oven
    Set your oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. Prepare the Brinjal
    Wash and slice the brinjal into rounds. Lightly salt them and let sit for 10 minutes to remove excess moisture. Pat dry with paper towels.
  3. Mix the Glaze
    In a small bowl, combine olive oil, maple syrup, smoked paprika, salt, and pepper. Stir well to form a smooth glaze.
  4. Coat the Brinjal
    Brush both sides of each brinjal slice with the glaze. Arrange slices on the baking tray in a single layer.
  5. Roast the Brinjal
    Roast for 20–25 minutes, flipping halfway, until the brinjal is tender and caramelized. If using balsamic vinegar, drizzle over the brinjal for the last 5 minutes of roasting.
  6. Garnish and Serve
    Sprinkle fresh herbs over the roasted brinjal and serve immediately. It pairs well with rice, quinoa, or as part of a roasted vegetable platter.

  • Use medium-sized, firm brinjals for the best texture.
  • Salting the brinjal helps reduce bitterness and prevents sogginess.
  • Don’t overcrowd the baking tray; this ensures even roasting and caramelization.
  • For a smoky flavor, finish with a quick broil for 1–2 minutes.
