For the Meatballs

  • 500 g beef mince
  • 1 small onion, finely grated
  • 2 garlic cloves, finely chopped

  • 30 ml milk
  • 15 g fresh parsley, finely chopped
  • 5 ml dried mixed herbs
  • 2.5 ml smoked paprika
  • 5 ml Worcestershire sauce
  • 5 g salt
  • 2.5 ml freshly ground black pepper
  • 15 ml vegetable oil, for browning

For the Gravy

  • 1 large onion, thinly sliced
  • 2 carrots, sliced
  • 2 garlic cloves, finely chopped
  • 30 g tomato paste
  • 500 ml beef stock
  • 250 ml canned chopped tomatoes
  • 15 ml Worcestershire sauce
  • 5 ml dried thyme
  • 2 bay leaves
  • 15 g cake flour
  • Salt and black pepper
  • 15 g fresh parsley, chopped

Method

Place the beef mince in a large bowl.

Add the grated onion, garlic, breadcrumbs, egg, milk, parsley, mixed herbs, paprika and Worcestershire sauce.

Season with salt and black pepper.

Mix gently with your hands until the ingredients are evenly combined. Do not overwork the mixture because this can make the meatballs dense.

Shape the mixture into approximately 20 meatballs.

Heat the oil in a large frying pan over medium-high heat.

Brown the meatballs in batches for approximately 2 to 3 minutes per side. They do not need to cook through at this stage.

Transfer the browned meatballs to the slow cooker.

Using the same frying pan, add the sliced onion and carrots.

Cook for approximately 5 minutes until the onion begins to soften.

Add the garlic and cook for another 30 seconds.

Stir in the tomato paste and flour.

Cook for 1 minute.

Gradually add the beef stock while stirring to prevent lumps.

Add the chopped tomatoes, Worcestershire sauce, thyme and bay leaves.

Pour the gravy mixture over the meatballs.

Cover and cook on low for approximately 6 to 7 hours or on high for approximately 3 to 4 hours, until the meatballs are cooked through and tender.

Remove the bay leaves.

Taste the gravy and adjust the seasoning.

Scatter with fresh parsley before serving.

How to Make the Meatballs Tender

The texture of your meatballs depends heavily on how you handle the mince. Mix the ingredients only until they come together.

Breadcrumbs help absorb moisture and give the meatballs a softer texture. Adding a small amount of milk to the breadcrumbs creates an even more tender result.

  • Salt and black pepper
  • 15 ml vegetable oil
  • 250 g mushrooms, sliced
  • 2 large onions, sliced
  • 30 g tomato paste
  • 500 ml beef stock
  • 15 ml Worcestershire sauce
  • 10 g cake flour
  • 100 ml fresh cream
  • 10 g fresh parsley, to garnish

Method

Combine the beef mince, breadcrumbs, egg, milk, garlic, parsley and thyme.

Season with salt and black pepper.

Mix gently and shape into approximately 20 meatballs.

Heat the oil in a large frying pan.

Brown the meatballs in batches and transfer them to the slow cooker.

Add the mushrooms and onions to the frying pan.

Cook for 5 to 7 minutes until the onions soften and the mushrooms begin to brown.

Stir in the tomato paste and flour.

Gradually add the beef stock and Worcestershire sauce.

Stir until smooth.

Pour the gravy over the meatballs.

Cover and cook on low for 6 to 7 hours.

Stir in the cream during the final 15 to 20 minutes of cooking.

Taste and adjust the seasoning.

Garnish with fresh parsley and serve immediately.

The cream should not be added at the beginning because prolonged slow cooking can affect its texture.

Tomato and Herb Meatballs

If you prefer a more tomato-forward gravy, this version combines canned tomatoes with herbs, garlic and beef stock. It works especially well with pasta or creamy mashed potatoes.

  • 500 g beef mince
  • 1 small onion, finely grated
  • 60 g fresh breadcrumbs
  • 1 large egg
  • 2 garlic cloves, finely chopped
  • 10 g fresh parsley, chopped
  • 5 ml dried oregano
  • 5 ml dried basil
  • Salt and black pepper
  • 15 ml olive oil
  • 400 g canned chopped tomatoes
  • 250 ml beef stock
  • 30 g tomato paste
  • 1 large onion, finely chopped
  • 1 red pepper, finely diced
  • 5 ml smoked paprika
  • 5 ml Worcestershire sauce
  • 100 g baby spinach, optional

Method

Combine the mince, grated onion, breadcrumbs, egg, garlic, parsley and half of the oregano and basil.

Season with salt and pepper.

Shape into medium-sized meatballs.

Heat the olive oil in a frying pan.

Brown the meatballs on all sides.

Transfer them to the slow cooker.

Add the chopped onion and red pepper to the pan.

Cook for approximately 4 minutes.

Add the tomato paste and smoked paprika.

Cook for 1 minute.

Add the canned tomatoes, beef stock, Worcestershire sauce and remaining herbs.

Stir well.

Pour the sauce over the meatballs.

Cover and cook on low for approximately 6 hours or on high for approximately 3 hours.

Add the baby spinach during the final 10 minutes if using.

Serve with pasta, rice or crusty bread.

What to Serve With Slow-Cooked Meatballs

Creamy mashed potatoes are one of the best accompaniments for meatballs in gravy. The potatoes absorb the sauce and provide a soft contrast to the meatballs.

For a quicker option, serve the meatballs over rice. Long-grain rice, basmati rice or brown rice can all work well.

Pasta is another practical choice, particularly with a tomato-based gravy. Choose spaghetti, penne or another pasta shape that holds plenty of sauce.
