Soft and Fluffy Homemade Cream Buns

Cream buns are a popular bakery treat known for their soft, fluffy texture and sweet, creamy filling. Making them at home allows you to enjoy fresh, preservative-free buns that taste far superior to store-bought versions. This recipe guides you step by step through preparing light, airy buns and a smooth, rich cream filling. Whether you want a simple snack, a dessert for guests, or a special breakfast treat, homemade cream buns offer a satisfying and indulgent experience.

Ingredients

For the buns:

  • 500 g all-purpose flour
  • 50 g sugar
  • 7 g instant yeast
  • 1 tsp salt
  • 250 ml warm milk
  • 50 g unsalted butter, softened
  • 1 large egg

For the cream filling:

  • 250 ml heavy cream
  • 30 g sugar
  • 1 tsp vanilla extract

Optional: powdered sugar for dusting

Instructions

  1. Prepare the Dough
    Mix flour, sugar, salt, and yeast in a bowl. Combine warm milk and egg, then gradually add to the dry ingredients. Knead for 10 minutes until smooth. Add softened butter and knead another 5 minutes until elastic.
  2. First Proofing
    Place the dough in a greased bowl, cover, and let it rise in a warm spot for 1–2 hours, until it doubles in size.
  3. Whip the Cream
    Chill the cream in the fridge. Whip with sugar and vanilla extract until stiff peaks form. Keep refrigerated until ready to fill the buns.
  4. Shape the Buns
    Punch down the dough. Divide into 12 equal pieces. Roll each into a ball and place on a lined baking tray. Flatten slightly if desired.
  5. Second Proofing
    Cover the buns and let them rise for 30–40 minutes. Preheat oven to 180°C.
  6. Bake
    Brush buns with milk or an egg wash for shine. Bake for 18–20 minutes until golden brown. Cool completely before filling.
  7. Fill the Buns
    Slice buns horizontally. Pipe or spoon whipped cream into the center. Dust with powdered sugar if desired.

  • Use room-temperature butter and eggs to ensure smooth dough.
  • Chill cream thoroughly before whipping to achieve stiff peaks.
  • Store filled buns in the fridge and consume within 1–2 days for freshness.
