Method

  1. Prepare the Egg Whites

  2. Mix the Yolks
    In a separate bowl, whisk egg yolks with milk and vanilla extract until smooth. Gently fold in the flour and baking powder until well combined.
  3. Combine Yolks and Whites
    Carefully fold the egg whites into the yolk mixture in small batches, using a spatula. Be gentle to avoid deflating the whites, which provide the fluffy texture.
  4. Cook the Pancakes
    Heat a nonstick pan over low heat and lightly grease with butter or oil. Spoon a portion of the batter onto the pan, forming thick, round pancakes. Cover with a lid and cook for 3–5 minutes until the bottom is golden. Flip gently and cook for another 3–5 minutes. Cooking on low heat ensures the pancakes rise slowly and cook through.
  5. Serve
    Stack the souffle pancakes on a plate, dust with powdered sugar, drizzle with syrup, and top with fresh fruits or whipped cream. Serve immediately for the best texture.
