One such example is the South African Grilled Halloumi Salad, a dish that combines the rich flavours of grilled halloumi cheese with an array of fresh and colourful ingredients. This salad is a celebration of textures and tastes, and it’s perfect for those warm summer days or any time you crave a healthy, yet satisfying meal.

At the heart of this salad is halloumi cheese, a semi-hard, brined cheese originating from Cyprus. Halloumi has a high melting point, which makes it ideal for grilling or frying. To create this culinary delight, start by gathering the following ingredients:

  • 1 red bell pepper, thinly sliced

Begin by preheating your grill or a non-stick frying pan over medium-high heat. Slice the halloumi cheese into approximately 1/4-inch thick slices. Brush each slice with a little olive oil and place them on the grill or pan. Cook for about 2-3 minutes on each side, until they develop a golden-brown colour and grill marks. Set aside to cool slightly.

Meanwhile, prepare the salad by combining the mixed salad greens, cherry tomatoes, cucumber, red onion, red bell pepper, Kalamata olives, and fresh mint leaves in a large bowl. Toss the ingredients gently to ensure even distribution.

In a separate small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and pepper to create a zesty dressing. Drizzle the dressing over the salad mixture and toss once again to coat all the ingredients evenly.

Now, it’s time to assemble the salad. Arrange the grilled halloumi slices on top of the bed of mixed greens and vegetables. The warm, slightly melted cheese will infuse the salad with its wonderful flavours.
