Green curry gets its color from green chilies and herbs. The curry paste forms the base. Coconut milk gives the dish a smooth texture. Fresh vegetables add balance. When you cook everything together, you get a curry that tastes bright and satisfying.

Ingredients
400 g chicken breast or thigh, sliced
2 tbsp green curry paste
400 ml coconut milk
1 cup chicken stock
1 tbsp oil
1 cup sliced baby marrows
1 cup sliced green beans
1 small onion, sliced
2 garlic cloves, minced
1 tbsp fish sauce
1 tbsp sugar
Juice of half a lime
Fresh basil for garnish

How to Prepare the Curry Base
Heat oil in a pot over medium heat.
Add the sliced onion and garlic.
Cook until soft and fragrant.
Add green curry paste and stir for one minute to release flavor.

Add Chicken and Liquids
Add the sliced chicken and stir until coated with the paste.
Pour in coconut milk and chicken stock.
Bring to a gentle simmer.

Add Vegetables and Seasoning
Add baby marrows and green beans.
Add fish sauce and sugar.
Simmer for ten to fifteen minutes until the chicken is cooked and the vegetables are tender.

Finish the Curry
Taste and adjust seasoning.
Add lime juice for brightness.
Remove from heat and garnish with fresh basil.

How to Serve
Serve the curry hot with steamed jasmine rice.
Add extra lime wedges if you want more acidity.

Tips for a Better Curry
Use full fat coconut milk for a creamier texture.
Adjust the curry paste amount if you want stronger heat.
Add spinach or peas if you want more vegetables.
Use fresh basil for better aroma.
