Hot Cross Buns Recipe

Hot cross buns are soft spiced rolls with a slightly sweet flavor and a distinct cross on top. They are popular during Easter, but many people enjoy them throughout the year. You can make them at home with simple ingredients. A homemade batch gives you better texture, strong spice aroma, and fresh flavor. This recipe helps you prepare buns that rise well and stay soft.

A good hot cross bun starts with yeast. The dough needs steady warmth to rise properly. Spices like cinnamon and nutmeg add depth. Raisins or currants add sweetness. A light glaze finishes the buns and gives them shine.

Ingredients for the Dough
500 g cake flour or bread flour
1 packet instant yeast, 10 g
60 g sugar
1 tsp ground cinnamon
1 tsp mixed spice
1 tsp nutmeg
1 tsp salt
60 g melted butter
300 ml warm milk
1 egg
150 g raisins or currants

Ingredients for the Cross Paste
4 tbsp flour
5 tbsp water

Ingredients for the Glaze
3 tbsp apricot jam
2 tbsp hot water

How to Prepare the Dough
Add flour, yeast, sugar, cinnamon, mixed spice, nutmeg, and salt to a large bowl.
Mix well.
Add melted butter, warm milk, and egg.
Stir until a soft dough forms.
Knead for ten minutes until smooth.
Add raisins and knead again until evenly mixed.

First Rise
Place the dough in a greased bowl.
Cover with a clean cloth.
Let it rise for one hour in a warm place until doubled in size.

Shape the Buns
Punch down the dough to remove air.
Divide into twelve even pieces.
Shape each piece into a ball.
Place balls on a baking tray lined with baking paper.
Leave space between them.

Second Rise
Cover the tray loosely with a cloth.
Let the buns rise for thirty minutes until puffy.

Prepare the Cross Paste
Mix flour and water until smooth.
Spoon into a small piping bag.
Pipe a straight line across each row of buns.
Pipe another line across the opposite direction to form a cross.

Bake the Buns
Preheat the oven to 180 degrees Celsius.
Bake for twenty to twenty five minutes until golden brown.

Prepare the Glaze
Mix apricot jam with hot water.
Brush the warm buns with the glaze to add shine and sweetness.

Tips for Better Buns
Use warm milk, not hot milk, to protect the yeast.
Knead long enough to get a smooth dough.
Let the buns cool before serving to keep the texture soft.
Replace raisins with cranberries if you prefer a sharper flavor.

Hot cross buns are simple to make and deliver strong aroma and softness. You control the sweetness and spice level. With this recipe, you get buns that feel fresh and stay tender. They work well for breakfast, tea time, or as a warm treat any day of the year.
