Originating from Thailand, Massaman Curry is a fragrant and flavorful dish that tantalizes the taste buds with its rich blend of spices and creamy coconut milk. Known for its fusion of Thai, Indian, and Persian culinary influences, Massaman Curry offers a unique culinary experience that’s both comforting and exotic. Let’s dive into the world of Thai cuisine and learn how to prepare this delectable Massaman Curry at home:

Ingredients:

For the Massaman Curry Paste:

  • 3-4 dried red chilies, soaked in warm water for 15 minutes
  • 2 shallots, peeled and chopped
  • 4 cloves garlic, peeled
  • 1-inch piece of galangal or ginger, peeled and chopped
  • 1 stalk lemongrass, tough outer layers removed, chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground white pepper
  • 1 tablespoon shrimp paste (optional, for authenticity)
  • 1 tablespoon vegetable oil

For the Massaman Curry:

  • 500g boneless chicken thighs, cut into bite-sized pieces (substitute with beef or tofu for variations)
  • 400ml coconut milk
  • 2 tablespoons Massaman curry paste (adjust according to preferred spice level)
  • 2 potatoes, peeled and cut into cubes
  • 1 onion, sliced
  • 1 tablespoon palm sugar or brown sugar
  • 2 tablespoons fish sauce or soy sauce (for vegetarian/vegan option)
  • 1/4 cup roasted peanuts
  • Fresh cilantro leaves for garnish

Instructions:

  1. Prepare the Curry Paste: In a blender or food processor, combine the soaked dried red chilies, shallots, garlic, galangal or ginger, lemongrass, ground coriander, ground cumin, ground cinnamon, ground cloves, ground cardamom, ground nutmeg, ground white pepper, and shrimp paste (if using). Blend until a smooth paste forms, adding a tablespoon of vegetable oil if needed to facilitate blending.
  2. Cook the Curry: Heat a large pot or skillet over medium heat. Add 2 tablespoons of Massaman curry paste and cook for 1-2 minutes until fragrant.
  3. Add the Protein and Vegetables: Add the chicken thighs (or your protein of choice) to the pot and cook until browned on all sides. Then, add the sliced onion and cubed potatoes to the pot.
  4. Simmer with Coconut Milk: Pour in the coconut milk, stirring to combine with the curry paste and coat the chicken and vegetables. Bring the mixture to a gentle simmer.
  5. Season and Sweeten: Stir in the palm sugar or brown sugar, fish sauce or soy sauce, and roasted peanuts. Allow the curry to simmer for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Serve and Garnish: Once cooked, ladle the Massaman Curry into serving bowls. Garnish with fresh cilantro leaves for a burst of color and flavor.
