Ox Liver Recipe: A Hearty and Flavourful Dish Made Simple

Ox liver is a nutrient-dense and budget-friendly protein that, when cooked right, delivers rich and satisfying flavour. This easy recipe brings out the best in liver, combining it with caramelised onions, a savoury sauce, and a touch of Worcestershire for depth. Perfect for weeknight dinners, this dish is both comforting and quick to make.

Ingredients:

  • 500 g ox liver, sliced into strips
  • Sea salt and freshly ground black pepper, to taste
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 2 onions, sliced
  • 1 teaspoon crushed garlic
  • 2 tablespoons brown onion thickener
  • ½ cup water
  • 1 tablespoon Worcestershire sauce

Method:

  1. Season the ox liver strips with sea salt and freshly ground black pepper.
  2. Heat 2 tablespoons of olive oil in a large pan over medium-high heat. Add the liver and brown it quickly on all sides. Remove from the pan and set aside.
  3. Add the remaining 1 tablespoon of olive oil and the butter to the pan. Once the butter has melted, add the sliced onions and sauté for 1 minute.
  4. Add the crushed garlic and continue to fry until the onions are soft and translucent.
  5. In a separate bowl or cup, mix the brown onion thickener into the water until smooth. Pour this mixture into the pan. Let it simmer gently for 5 minutes to develop flavour and thicken the sauce.
  6. Return the browned liver to the pan and add the Worcestershire sauce. Cook for another 5 minutes, stirring occasionally, until the liver is tender and coated in the rich onion gravy.

Serving Suggestions:

Serve the ox liver hot with creamy mashed potatoes, fluffy rice, or slices of crusty bread to soak up the delicious sauce. This dish pairs wonderfully with sautéed greens or steamed vegetables for a complete, wholesome meal.
