Baked potato wedges are a simple, satisfying side dish that deliver crisp edges, fluffy centers, and big flavor without the need for deep frying. They pair well with everything from grilled meats to veggie burgers, and they also stand alone as a snack with your favorite dip. With a few pantry staples, you can make perfectly seasoned potato wedges that are golden, crunchy, and healthier than traditional fries.

Ingredients

  • 4 large potatoes (Russet or Yukon Gold work best)
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika (or regular paprika)
  • ½ tsp dried oregano or thyme
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

Step 1: Prep the Potatoes
Preheat the oven to 200°C (400°F). Wash and scrub the potatoes thoroughly, leaving the skins on for extra crispness and nutrients. Cut each potato into evenly sized wedges by slicing in half lengthwise, then cutting each half into 3–4 wedges depending on size.

Step 2: Season
Place the wedges in a large bowl. Drizzle with olive oil and toss to coat. Sprinkle over garlic powder, onion powder, paprika, oregano, salt, and pepper. Mix until the wedges are evenly seasoned.

Step 3: Bake
Arrange the wedges in a single layer on a parchment-lined baking sheet, making sure they are not overcrowded. Bake for 35–40 minutes, flipping halfway through, until golden brown and crispy on the outside.

Step 4: Serve
Remove from the oven and garnish with chopped parsley or a sprinkle of Parmesan cheese. Serve immediately with ketchup, garlic aioli, ranch dressing, or your favorite dipping sauce.

Tips for Perfect Wedges

  • Soak the potatoes: For extra crispiness, soak the wedges in cold water for 20–30 minutes before seasoning. This removes excess starch.
  • High heat is key: Baking at 200°C (400°F) or higher ensures crispy edges.
  • Don’t overcrowd the tray: Overlapping wedges will steam instead of crisping.
  • Flip halfway: Turning them ensures even browning on both sides.

Flavor Variations

  • Spicy wedges: Add cayenne pepper or chili powder for a kick.
  • Cheesy wedges: Toss with grated cheddar in the last 5 minutes of baking.
  • Herb-loaded wedges: Add rosemary, thyme, or Italian seasoning.
  • Lemon wedges: Squeeze fresh lemon juice over just before serving for brightness.

Baked potato wedges are an easy and versatile recipe you can make with minimal effort and maximum payoff. They are crispy, flavorful, and healthier than fried alternatives, making them a great addition to both weeknight dinners and weekend gatherings.
