1. Indian Butter Chicken Curry (Murgh Makhani)
This North Indian favorite is creamy and comforting. The sauce combines tomato, cream, and butter with a rich blend of spices.

Ingredients:

  • 500 g chicken breast, cubed
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 400 g crushed tomatoes
  • 150 ml heavy cream
  • Salt to taste

Instructions:

  1. Sauté onions, garlic, and ginger in butter until soft.
  2. Add the spices and stir for 30 seconds to release aroma.
  3. Add chicken and cook until browned.
  4. Pour in tomatoes, cover, and simmer for 15 minutes.
  5. Stir in cream, simmer another 5 minutes, and serve with basmati rice or naan.

2. Thai Green Curry
Fresh herbs define this vibrant dish. The balance of coconut milk and green chili creates a fragrant, slightly spicy sauce.

Ingredients:

  • 2 tablespoons green curry paste
  • 400 ml coconut milk
  • 1 chicken breast, sliced
  • 1 cup mixed vegetables (zucchini, bell peppers, or eggplant)
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • Fresh basil leaves

Instructions:

  1. Heat curry paste in a pan until fragrant.
  2. Add coconut milk and stir until blended.
  3. Add chicken and vegetables. Simmer for 10–15 minutes.
  4. Stir in fish sauce and sugar.
  5. Garnish with basil and serve with jasmine rice.

3. Japanese Katsu Curry
This curry combines crispy breaded cutlets with a thick, mildly spiced sauce. It’s comforting and easy to prepare.

Ingredients:

  • 2 chicken breasts
  • 1 egg, beaten
  • 1 cup panko breadcrumbs
  • 1 onion, chopped
  • 1 carrot, sliced
  • 2 tablespoons curry powder
  • 500 ml chicken stock

  • 1 tablespoon curry powder
  • 400 ml coconut milk
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions:

  1. Sauté onion, pepper, and garlic.
  2. Add curry powder and stir briefly.
  3. Add shrimp or chicken and cook until done.
  4. Pour in coconut milk and season with thyme.
  5. Simmer 10 minutes, then serve with rice and lime wedges.

5. South African Cape Malay Curry
This curry blends sweet and savory flavors using fruit and aromatic spices.

Ingredients:

  • 500 g beef or lamb cubes
  • 2 onions, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 2 tomatoes, chopped
  • 1 apple, grated
  • 1 tablespoon apricot jam
  • 250 ml beef stock
