Blackberry cheesecake bars are a decadent dessert that combines the creamy texture of cheesecake with the sweet-tart flavor of fresh blackberries. These bars are easy to prepare, visually appealing, and perfect for serving at gatherings, afternoon tea, or as a sweet treat at home. Using a simple crust and fresh fruit topping creates a dessert that is both rich and refreshing.

Ingredients
For the crust:
1 cup digestive biscuits or graham crackers, crushed
50 grams unsalted butter, melted
2 tablespoons sugar

For the cheesecake filling:
250 grams cream cheese, softened
60 grams sugar
1 teaspoon vanilla extract
1 egg

For the blackberry topping:
150 grams fresh blackberries
1 tablespoon sugar
1 teaspoon lemon juice

Steps
Preheat the oven to 175 degrees Celsius.
Mix crushed biscuits with melted butter and sugar. Press the mixture evenly into a lined 20 cm square baking pan to form the crust. Bake for 8–10 minutes until lightly golden.

In a separate bowl, beat the cream cheese with sugar and vanilla until smooth. Add the egg and mix until fully combined. Pour the cheesecake filling over the baked crust.

In a small saucepan, combine blackberries, sugar, and lemon juice. Cook over medium heat for 3–4 minutes until the berries release juice but remain slightly chunky. Allow to cool slightly, then spoon over the cheesecake layer.

Bake the bars for 20–25 minutes until the cheesecake is set but still slightly wobbly in the center. Remove from the oven and allow to cool completely at room temperature, then refrigerate for at least 2 hours before slicing into squares.
