A Delicious Boeber Recipe

Boeber, a traditional South African Cape Malay sweet milk drink, is a comforting treat that holds a special place in the hearts of many. Infused with aromatic spices and sweetened with condensed milk, this creamy beverage is often enjoyed during Ramadan and other festive occasions. Let’s explore how to make Boeber from scratch using the metric measuring system:

Ingredients:

  • 1 liter full-cream milk
  • 100 grams vermicelli or broken pieces of spaghetti
  • 50 grams sago pearls
  • 50 grams white sugar
  • 2 tablespoons rose water
  • 2 tablespoons desiccated coconut
  • 1 cinnamon stick
  • 3 cardamom pods, lightly crushed
  • 3 cloves
  • Pinch of ground nutmeg
  • Pinch of ground cinnamon
  • 1 can (385 grams) sweetened condensed milk
  • Slivered almonds or pistachios, for garnish (optional)
  • Raisins, for garnish (optional)

Instructions:

  • Rinse the sago pearls under cold water and soak them in a bowl of water for about 30 minutes. This helps soften them before cooking.
  • In a separate bowl, soak the vermicelli or broken spaghetti in hot water for 15 minutes to soften.
  • In a large pot, bring the milk to a gentle boil over medium heat, stirring occasionally to prevent it from scorching.
  • Once the milk comes to a boil, add the cinnamon stick, cardamom pods, cloves, ground nutmeg, and ground cinnamon. Stir well to infuse the milk with the aromatic spices.
  • Drain the soaked sago pearls and add them to the pot of boiling milk. Reduce the heat to low and simmer gently for 15-20 minutes, stirring occasionally, until the sago pearls are translucent and tender.
  • Drain the soaked vermicelli or spaghetti and add it to the pot with the sago pearls and milk. Stir to combine and continue simmering for an additional 10 minutes, or until the vermicelli is cooked through.
  • Add the white sugar and rose water to the pot, stirring until the sugar is dissolved. Then pour in the sweetened condensed milk, stirring well to incorporate.
  • Let the Boeber simmer for a few more minutes until heated through and slightly thickened. Remove the pot from the heat and discard the whole spices.
  • Ladle the hot Boeber into serving cups or bowls. Garnish with slivered almonds or pistachios and a few raisins, if desired.
  • Serve the Boeber warm and enjoy the comforting flavors of this beloved South African treat.

Tips:

  • Adjust the sweetness of the Boeber to your liking by adding more or less condensed milk and sugar.
  • Feel free to customize the spices according to your taste preferences. Some variations include adding a pinch of ground cardamom or ginger.
  • Boeber can be served as a dessert or enjoyed as a warm beverage on cold days.
