Breakfast Tacos Recipe

Breakfast tacos are fast, filling, and easy to customize. This recipe gives you a solid base with eggs, tortillas, cheese, and toppings. You can prepare them in under 20 minutes.

Ingredients

  • 4 large eggs
  • 4 small flour or corn tortillas
  • 100 g shredded cheddar or Mexican cheese
  • 100 g cooked breakfast sausage or bacon (optional)
  • 1 small tomato, diced
  • 1 small avocado, sliced
  • 2 tablespoons chopped onion
  • 1 tablespoon oil or butter
  • Salt and pepper to taste
  • Hot sauce or salsa (optional)
  • Fresh coriander or chopped spring onions for garnish

Steps

  1. Cook the meat
    If using sausage or bacon, cook it in a pan until fully done. Remove and set aside.
  2. Prepare the eggs
    Crack the eggs into a bowl. Add a pinch of salt and pepper. Beat well. Heat oil or butter in a nonstick pan over medium heat. Pour in the eggs. Stir gently until scrambled and fully cooked.
  3. Warm the tortillas
    Heat a dry pan over medium heat. Warm each tortilla for 15 to 30 seconds per side until soft and pliable. You can also microwave them wrapped in a damp paper towel for 20 seconds.
  4. Assemble the tacos
    Lay out the tortillas. Spoon the scrambled eggs onto each. Add the cooked meat. Sprinkle with cheese. Add tomato, onion, and avocado slices.
  5. Add toppings
    Top with hot sauce or salsa. Garnish with fresh coriander or spring onions.
  6. Serve hot
    Serve immediately while the eggs are warm and the cheese is melty.

Tips

  • For vegetarian tacos, skip the meat and add black beans or sautéed mushrooms.
  • Use hard-shell tacos for a crunchier version.
  • Meal prep by pre-cooking the meat and chopping toppings the night before.
  • Swap cheddar for feta, goat cheese, or pepper jack for variety.

These tacos are great for busy mornings or weekend brunch. With simple ingredients and quick prep, you can make a satisfying breakfast any day of the week.
