South African cuisine is known for its diverse flavours and influences from various cultures. Among its most beloved desserts is the iconic milk tart, also known as melktert. Traditionally, milk tart contains a buttery crust and a creamy filling flavoured with cinnamon. However, for those with nut allergies, finding nut-free recipes can be a challenge. In this article, we present two delightful nut-free South African milk tart recipes that will tantalize your taste buds and ensure everyone can enjoy this delectable treat.

  1. Classic Nut-Free Milk Tart Recipe:

Ingredients:

  • For the crust:
    • 1 ½ cups all-purpose flour
    • ½ cup unsalted butter, cold and cubed
    • ¼ cup granulated sugar
    • 1 large egg, beaten
    • 1 teaspoon vanilla extract
  • For the filling:
    • 4 cups milk
    • ½ cup all-purpose flour
    • ½ cup granulated sugar
    • 3 large eggs
    • 1 teaspoon vanilla extract
    • 1 tablespoon butter
    • 1 teaspoon ground cinnamon (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, butter, and sugar for the crust. Use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
  3. Add the beaten egg and vanilla extract to the mixture, and knead until it forms a soft dough.
  4. Press the dough into a greased tart pan, evenly spreading it along the bottom and sides.
  5. In a saucepan, heat the milk until it reaches a gentle simmer. Be careful not to let it boil.
  6. In a separate bowl, whisk together the flour, sugar, eggs, and vanilla extract until well combined.
  7. Slowly pour the hot milk into the egg mixture, whisking continuously to prevent curdling.
  8. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens to a custard-like consistency.
  9. Remove from heat and stir in the butter until melted and incorporated.
  10. Pour the filling into the prepared crust and smooth the surface.
  11. Optional: Sprinkle ground cinnamon evenly over the top of the tart.
  12. Bake for 25-30 minutes or until the filling is set and the crust is golden brown.
  13. Allow the milk tart to cool completely before serving. It can be served warm or chilled.
  14. Vegan Nut-Free Milk Tart Recipe:

Ingredients:

    • 1 ½ cups all-purpose flour
    • ½ cup vegan margarine, cold and cubed

  6. Remove the saucepan from heat and stir in the vegan margarine and vanilla extract until fully incorporated.
  7. Pour the filling into the prepared crust and smooth the surface.
  8. Optional: Sprinkle ground cinnamon evenly over the top of the tart.
  9. Bake for 25-30 minutes or until the filling is set and the crust is golden brown.
  10. Allow the milk tart to cool completely before serving. It can be served warm or chilled.
