Garlic Parmesan fries are a delicious twist on classic French fries, offering a combination of crispy potatoes, savory garlic, and salty Parmesan cheese. They are perfect as a side dish, snack, or appetizer for any occasion. Making them at home is easy, and the results are far more flavorful than store-bought versions. With the right technique, you can achieve fries that are crisp on the outside and tender on the inside, all coated in a rich garlic-Parmesan mixture.

Ingredients

  • 4 large russet potatoes
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 50 g grated Parmesan cheese
  • 1 tsp dried oregano or Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

Step 1: Prepare the Potatoes
Preheat your oven to 220°C (425°F). Wash and scrub the potatoes thoroughly, leaving the skin on for extra crispness. Cut each potato into evenly sized fries or wedges.

Step 2: Season the Fries
Place the potato pieces in a large bowl. Drizzle with olive oil and toss with minced garlic, oregano, salt, and black pepper until evenly coated.

Step 3: Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper, ensuring they are not overcrowded. Bake for 25–30 minutes, flipping halfway through, until golden and crispy.

Step 4: Add Parmesan
Remove the fries from the oven and immediately sprinkle with grated Parmesan cheese. Toss gently so the cheese sticks to the warm fries.

Step 5: Serve
Transfer the fries to a serving dish and garnish with chopped fresh parsley. Serve hot with ketchup, garlic aioli, or your favorite dipping sauce.

  • Use starchy potatoes: Russet potatoes give the best crispiness.
  • Soak before baking: Soak cut potatoes in cold water for 20–30 minutes to remove excess starch for even crispier fries.
  • High heat: Baking at 220°C ensures golden, crispy edges.
  • Add cheese last: Sprinkle Parmesan immediately after baking to allow it to melt slightly without burning.
