Dinner rolls are a timeless addition to any meal, from casual family dinners to festive holiday spreads. The secret to perfect dinner rolls lies in achieving a soft, fluffy texture that melts in your mouth while maintaining a golden, slightly crisp exterior. With the right ingredients, techniques, and a little patience, you can make restaurant-quality dinner rolls at home. Here’s a detailed guide on how to make fluffy dinner rolls that impress every time.

Ingredients for Fluffy Dinner Rolls

  • 500 grams all-purpose flour
  • 7 grams instant yeast (1 packet)
  • 50 grams sugar
  • 10 grams salt
  • 60 grams unsalted butter, softened
  • 250 ml warm milk
  • 1 large egg
  • Extra butter for brushing

Step 1: Preparing the Dough

  1. In a small bowl, combine warm milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt.
  3. Add softened butter, egg, and the yeast mixture to the flour.
  4. Mix until the dough comes together, then knead for 8–10 minutes by hand or 5–6 minutes with a stand mixer. The dough should be smooth, elastic, and slightly tacky.

Step 2: First Rise

  1. Place the kneaded dough in a lightly oiled bowl, turning it to coat all sides with oil.
  2. Cover with a clean kitchen towel or plastic wrap.
  3. Let the dough rise in a warm, draft-free area for 1–1.5 hours, or until it doubles in size.

Step 3: Shaping the Rolls

  1. Punch down the risen dough to release air.
  2. Divide the dough into 12 equal portions (or adjust for desired size).
  3. Shape each portion into a smooth ball by tucking the edges underneath and rolling gently.
  4. Place rolls on a greased baking tray or in a baking dish, leaving a little space between each roll.

Step 4: Second Rise

  1. Cover the shaped rolls with a kitchen towel and let them rise for another 30–40 minutes.
  2. They should puff up and almost touch each other. This rise ensures a soft, airy interior.

Step 5: Baking

  1. Preheat the oven to 180°C.
  2. Bake the rolls for 18–22 minutes, or until the tops are golden brown.
  3. Remove from the oven and immediately brush the tops with melted butter for a shiny, flavorful finish.

Tips for Fluffy Dinner Rolls

  • Use warm milk (not hot) to activate yeast without killing it.
  • Knead the dough thoroughly to develop gluten, which creates structure and softness.
  • Allow sufficient rising time for both the first and second rise; patience is key.
  • Brushing with butter while hot adds flavor and keeps the crust soft.
  • For variety, add herbs like rosemary or garlic to the dough for savory rolls, or a touch of honey for slightly sweet rolls.

Serving Suggestions
Serve dinner rolls warm with butter, olive oil, or alongside soups and stews. They are perfect for sandwiches, sliders, or simply as a side to complement main dishes. Rolls can also be stored in an airtight container for up to two days, or frozen for later use.

Mastering fluffy dinner rolls at home is easier than most people think. By following these steps and paying attention to yeast activation, kneading, and rising times, you’ll create rolls that are soft, airy, and irresistible. Every bite melts in your mouth, making your meals feel elevated and homemade.
