How to Make Homemade Shortbread the Easy Way

Shortbread is a timeless, buttery treat that has been enjoyed for generations. Its simplicity, crumbly texture, and rich flavour make it perfect for tea time, gifting, or enjoying as a sweet snack. While traditional shortbread recipes may seem intimidating, you can make homemade shortbread easily with just a few basic ingredients and simple steps. Here’s how to achieve perfectly tender, melt-in-your-mouth shortbread at home without stress.

Ingredients

  • 200 g unsalted butter, softened
  • 100 g caster sugar, plus extra for sprinkling
  • 250 g all-purpose flour
  • 50 g cornstarch or rice flour (for extra crumbly texture)
  • Pinch of salt
  • Optional: vanilla extract, lemon zest, or chocolate drizzle for flavour

Step-by-Step Method

  1. Prepare the Butter and Sugar
In a large mixing bowl, beat the softened butter with sugar until pale and creamy. This step ensures the shortbread will have a light texture. Add a teaspoon of vanilla extract or a pinch of lemon zest if desired.
  2. Mix in the Flour
Sift the flour, cornstarch, and salt together, then fold into the butter mixture using a spatula. Mix until the dough comes together. Avoid overworking the dough to prevent tough shortbread.
  3. Shape the Shortbread
You can shape your shortbread in several ways:
  • Classic Rectangle: Press the dough into a lined baking tray and score into squares or rectangles.
  • Rounds or Fingers: Roll the dough into logs and slice into fingers, or use a cookie cutter for rounds.
  • Individual Cookies: Roll small portions into balls and flatten slightly.
  1. Chill the Dough
Refrigerate the shaped dough for 20–30 minutes. Chilling prevents spreading during baking and helps retain the crumbly texture.
  2. Bake
Preheat the oven to 160°C. Bake the shortbread for 20–25 minutes, or until edges are lightly golden. Avoid overbaking to maintain a soft, tender crumb.
  3. Cool and Serve
Allow the shortbread to cool in the pan for 5–10 minutes before transferring to a wire rack. Optionally, sprinkle with sugar while still warm or drizzle with melted chocolate once cooled.

Tips for Perfect Shortbread

  • Use Quality Butter – The flavour of shortbread comes from butter, so choose unsalted, high-quality butter.
  • Don’t Overmix – Handle the dough gently to avoid tough biscuits.
  • Adjust Baking Time – Keep a close eye on smaller shapes; they bake faster than large rectangles.
  • Store Properly – Keep shortbread in an airtight container to maintain its delicate texture.

Variations to Try

  • Chocolate-Dipped Shortbread: Dip half of each piece in melted dark or milk chocolate.
  • Nutty Shortbread: Fold in finely chopped almonds, hazelnuts, or pistachios before baking.
  • Spiced Shortbread: Add a pinch of cinnamon, nutmeg, or cardamom for a warm, fragrant twist.
  • Citrus Shortbread: Mix in finely grated lemon, orange, or lime zest for a fresh flavour.

Homemade shortbread is surprisingly easy to make and infinitely adaptable. With just butter, sugar, and flour, you can create a delicate, buttery treat that melts in your mouth. Whether you enjoy it plain with tea or jazz it up with chocolate, nuts, or spices, this simple shortbread recipe is a foolproof way to bring classic, comforting flavour into your kitchen.
