  • 2 medium zucchinis, grated
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 2 eggs, lightly beaten
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper
  • Olive oil for frying

Instructions:

  1. Place grated zucchini in a clean kitchen towel and squeeze out excess moisture.

  • 2 large carrots, grated
  • 100 grams feta cheese, crumbled

  • 1 teaspoon fresh thyme leaves
  • Salt and pepper
  • Olive oil for frying

Instructions:

  1. Combine grated carrots, feta, flour, eggs, thyme, salt, and pepper in a bowl.
  2. Heat olive oil in a skillet over medium heat.
  3. Drop spoonfuls of the mixture into the pan and flatten slightly.

Lemon Yogurt Sauce:

  • 100 grams Greek yogurt
  • Juice of 1/2 lemon
  • Salt to taste

  • 500 grams potatoes, peeled and grated
  • 1/4 cup all-purpose flour
  • 1 egg, lightly beaten
  • 1 small onion, finely grated
  • Salt and pepper
  • Olive oil for frying

Instructions:

  1. Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  2. In a bowl, combine potatoes, flour, egg, onion, salt, and pepper. Mix well.
  3. Heat olive oil in a skillet over medium heat.
  4. Spoon potato mixture into the pan, flattening each fritter slightly.
  5. Fry for 4–5 minutes per side until golden and crispy.
  6. Drain on paper towels and serve with sour cream or a herb dip.
