There’s something deeply comforting about a warm bowl of mushroom soup—but Mushroom Soup De Luxe takes that comfort to the next level. This elevated version of the beloved classic delivers rich, earthy flavor, a velvety texture, and just the right balance of creaminess. Whether you’re looking to impress at a dinner party or treat yourself to a luxurious weeknight meal, this soup fits the bill beautifully.

Why This Mushroom Soup Stands Out

Unlike basic mushroom soups that can taste flat or overly creamy, this De Luxe version brings layers of flavor. A mix of fresh and dried mushrooms creates depth, while garlic, herbs, and a splash of cream make it feel indulgent without being heavy. The result? A restaurant-quality dish that’s surprisingly easy to make at home.

Ingredients You’ll Need

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 500 g fresh mushrooms (use a mix like cremini, button, and portobello), sliced
  • 15 g dried porcini mushrooms
  • 4 cups (1 litre) vegetable or chicken stock
  • ½ teaspoon thyme (dried or fresh)
  • ½ teaspoon salt
  • Freshly ground black pepper to taste
  • ½ cup (125 ml) fresh cream
  • Optional: a dash of white wine or sherry for added depth
  • Chopped parsley or truffle oil for garnish

Method

  1. Soak the Porcini
    Place the dried porcini mushrooms in a bowl and cover with 1 cup of hot water. Let them soak for 10–15 minutes, then drain and chop finely. Reserve the soaking liquid and strain it through a fine mesh to remove grit.
  2. Sauté the Aromatics
    In a large pot, heat the olive oil and butter over medium heat. Add the onion and cook for 3–4 minutes until soft and translucent. Stir in the garlic and cook for another minute.
  3. Cook the Mushrooms
    Add the fresh mushrooms and the chopped porcini to the pot. Cook for 8–10 minutes until the mushrooms release their moisture and begin to brown. Stir in thyme, salt, and pepper.
  4. Simmer
    Pour in the stock and the reserved mushroom soaking liquid. Bring to a boil, then reduce the heat and let it simmer gently for 15 minutes.
  5. Blend
    Use an immersion blender to purée the soup to your desired texture—smooth or slightly chunky. You can also transfer it to a blender in batches.
  6. Finish with Cream
    Stir in the cream and optional splash of wine or sherry. Let it heat through for 2–3 minutes without boiling.
  7. Serve
    Ladle into bowls and garnish with chopped parsley, a drizzle of truffle oil, or a swirl of cream if you’re feeling fancy.

Serving Suggestions

Pair this soup with crusty artisan bread, garlic toast, or a warm baguette for a cozy meal. It also works well as a starter for an elegant dinner or served in small cups at a cocktail party.
