Apple pie is an iconic dessert that embodies warmth, comfort, and the flavors of fall. The combination of tender, cinnamon-spiced apples encased in a flaky crust is simply irresistible. Ingredients:

For the Pie Crust:

  • 2 and 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and cut into small cubes
  • 1/4 to 1/2 cup ice water

For the Apple Filling:

  • 6-7 medium-sized apples (a mix of tart and sweet varieties such as Granny Smith and Honeycrisp)
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, cut into small cubes

Instructions:

  1. Prepare the Pie Crust:
    In a large mixing bowl, whisk together the all-purpose flour and salt. Add the chilled butter cubes and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Divide the dough into two equal portions, shape them into disks, and wrap them in plastic wrap. Refrigerate for at least 1 hour or overnight.
  2. Preheat and Prepare:
    Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out one portion of the chilled pie crust to fit a 9-inch pie dish. Carefully transfer the rolled-out dough to the pie dish and press it gently into the bottom and sides. Trim any excess dough hanging over the edges.
  3. Make the Apple Filling:
    Peel, core, and slice the apples into thin, even slices. In a large mixing bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss until the apples are evenly coated.
  4. Assemble the Pie:
    Pour the apple filling into the prepared pie crust, spreading it out evenly. Dot the top of the filling with small cubes of unsalted butter.
  5. Roll Out the Top Crust:
    Roll out the remaining portion of the chilled pie crust and place it on top of the apple filling. Trim any excess dough and seal the edges by crimping with a fork or your fingers. Cut a few slits in the top crust to allow steam to escape during baking.
  6. Bake to Perfection:
    Place the pie on a baking sheet to catch any drips. Bake in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbling. If the edges of the crust start to brown too quickly, cover them with aluminum foil.
  7. Cool and Serve:
    Allow the apple pie to cool on a wire rack for at least 2 hours to allow the filling to set. Serve warm or at room temperature, and enjoy it as is or with a scoop of vanilla ice cream or a dollop of whipped cream.
