Roasted mealies, also known as grilled corn on the cob, are a beloved treat in many cultures, especially in South Africa. This simple yet flavorful dish is perfect for summer barbecues, family gatherings, or as a tasty snack. Here’s a detailed recipe on how to make perfectly roasted mealies, along with tips for enhancing their flavor.

Ingredients

To make roasted mealies, you’ll need:

  • 4 fresh corn on the cob (mealies)
  • 2 tablespoons of melted butter or olive oil
  • Salt to taste
  • Black pepper to taste

Optional flavorings:

  • Paprika
  • Garlic powder
  • Fresh herbs (such as parsley or cilantro)
  • Lime wedges

Instructions

  1. Prepare the Corn
    Begin by husking the corn and removing all the silk. Rinse the mealies under cold water to remove any remaining silk strands. Pat them dry with a clean kitchen towel.
  2. Preheat the Grill
    Preheat your grill to medium-high heat. If you don’t have a grill, you can use a grill pan on the stove or roast the mealies in the oven at 200°C (400°F).
  3. Season the Corn
    Brush each ear of corn with melted butter or olive oil, ensuring they are evenly coated. This will help them roast evenly and prevent sticking. Sprinkle with salt and black pepper to taste. For added flavor, you can also sprinkle on some paprika, garlic powder, or your favorite herbs.
  4. Grill the Corn

  • Cheese Lovers: For a cheesy twist, sprinkle grated Parmesan or crumbled feta cheese over the hot corn just before serving.
  • Foil-Wrapped Corn: If you prefer a more steamed texture, wrap the corn in aluminum foil before grilling. This method keeps the corn moist and allows it to steam in its own juices.
