  • 1 butternut squash, peeled and diced
  • 1 can of chickpeas, rinsed and drained

  • 2 tomatoes, chopped
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

  • Fresh cilantro for garnish

Instructions:

  1. Heat oil in a large pot and sauté the onion until translucent. Add garlic and cook for another minute.
  2. Stir in the curry powder, cumin, and coriander, and cook for a minute until fragrant.
  3. Add the butternut squash, chickpeas, bell pepper, and tomatoes to the pot. Stir well to coat the vegetables with spices.
  4. Pour in the vegetable broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes or until the butternut squash is tender.
  5. Adjust the seasoning if needed. Serve the curry over steamed rice or with naan bread. Garnish with fresh cilantro.
  6. Cape Malay Sweet Potato Curry: Ingredients:
  • 2 large sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 1 cup green beans, trimmed and halved
  • 1 cup fresh spinach leaves
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Heat oil in a large skillet or pot. Add the onion and garlic, and sauté until the onion is translucent.
  2. Stir in the curry powder, turmeric, and cinnamon. Cook for a minute to release the flavors.
  3. Add the sweet potatoes and coat them with the spices. Pour in the coconut milk and vegetable broth, and bring to a simmer.
  4. Cover the pot and let it cook for about 15 minutes or until the sweet potatoes are tender.
  5. Stir in the green beans and cook for an additional 5 minutes until they are crisp-tender.
  6. Add the spinach leaves and cook until wilted. Season with salt and pepper to taste.
  7. Serve the Cape Malay sweet potato curry with fragrant basmati rice or roti bread.
  8. Tomato and Eggplant Curry: Ingredients:
  • 2 large eggplants, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 cup vegetable broth
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions:

  1. Heat oil in a large pan over medium heat. Add the onions and garlic, and sauté until golden brown.
  2. Add the curry powder, turmeric, cumin, and paprika. Stir well to coat the onions and garlic with the spices.
  3. Add the eggplant cubes and cook until they begin to soften, about 5-7 minutes.
  4. Stir in the chopped tomatoes and vegetable broth. Reduce the heat to low, cover the pan, and simmer for 15-20 minutes or until the eggplant is tender.
  5. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
  6. Enjoy the tomato and eggplant curry with steamed basmati rice or warm roti.
