Method

Preheat the oven to 180°C.

Lightly grease a large baking tray.

Place the leftover Bolognese in a mixing bowl.

Add the frozen peas and sweetcorn.

Roll out the thawed puff pastry on a lightly floured surface if necessary.

Cut the pastry into eight equal squares.

  • 1 roll puff pastry, thawed
  • 1 egg, beaten
  • 5 ml dried thyme
  • Salt and black pepper

Method

Preheat the oven to 200°C.

Combine the chopped beef, carrots, peas, onion and gravy in a bowl.

Add the thyme and season with salt and black pepper.

Cut the puff pastry into six to eight squares.

Place a portion of the filling in the centre of each square.

Fold the pastry over the filling.

Press the edges together and seal with a fork.

Cut a small slit in the top of each pie to allow steam to escape.

Brush the pastry with beaten egg.

Place on a lined baking tray.

Bake for approximately 20 to 25 minutes until golden and crisp.

Leftover Chicken Pie Variation

Leftover roast chicken can also become an excellent pastry filling. The important thing is to combine the chicken with a creamy or savoury sauce so that the meat does not become dry during baking.

Makes 6 pies.

  • 350 g cooked chicken, shredded
  • 150 g cooked mixed vegetables
  • 150 ml thick white sauce
  • 30 g grated cheddar cheese
  • 5 ml dried mixed herbs
  • 1 roll puff pastry, thawed
  • 1 egg, beaten
  • Salt and black pepper

Method

Preheat the oven to 200°C.

Combine the shredded chicken, vegetables and white sauce.

Add the cheese and mixed herbs.

Season with salt and black pepper.

Cut the pastry into six equal squares.

Add the chicken mixture to the centre of each square.

Fold the pastry over and press the edges firmly together.

Crimp the edges with a fork.

Brush the tops with beaten egg.

Make the Pastry More Flavourful

The pastry does not have to be plain. You can add flavour to the outside of the pies with a simple topping.

For a savoury topping, sprinkle a little dried oregano or mixed herbs over the pastry before baking.

Grated Parmesan can also be added during the final few minutes of baking.

How to Seal Meat Pies Properly

Place the filling in the centre of the pastry rather than spreading it all the way to the edges.

Leave enough space around the filling to create a clean seal.
